One Sheet Pan: Salmon Asparagus and Potatoes

Helloooo fooodies!

I want to share with you this recipe I tried this week and the whole family loved it! We keep this one!

What I like the most about this recipe is that the kitchen wont get full of dirty dishes. Also prep time is about 30 minutes and cooking time around 45 min, something like that.

The recipe has 3 main ingredients: Salmon, Asparagus and Potatoes. BUT you can replace potatoes with rice or sweet potatoes and asparagus can be replaced with broccoli or green beans.

I am not so creative in the kitchen so I look up for easy recipes. I found this one on pinterest and I felt in love with it! It was really delicious!

But still, I'll write them down with my own observations.



INGREDIENTS:

(4 servings)

▢ 4 salmon fillets
▢ 1 pound asparagus - ends trimmed
▢ 2 pounds baby red or gold potatoes - quartered
▢ 3 tablespoons olive oil
▢ salt and pepper to taste
▢ 2 teaspoons Italian herb blend
▢ 1 teaspoon garlic powder
▢ ½ lemon - thinly sliced

Dressing Ingredients

▢ 2 tablespoons butter - melted
▢ 2 tablespoons honey
▢ 1 teaspoon dijon mustard
▢ 1 teaspoon Italian herb blend

I only had 2 pieces of salmon which I bought one day ahead. For our family of three, 2 big pieces are more than enough. I had one nice piece with garlic and pepper and one without anything on it. I bought them so because these were the last 2 pieces in the whole supermarket. Usually, I buy just the salmon and I season it the way I like it.

I didnt have Italian Blend at home so I made it right away. You'll need oregano, basil, thyme and parsley, all dry of course. And Now I have the mix ready for other recipes in the future.

INSTRUCTIONS:

First thing you have to do is to heat up your oven to 200°C.

Meanwhile, start preparing the potatoes. Cut them in quorters, add some olive oil, salt and pepper, garlic powder, italian herbs mix. Mix everything.

Arrange them on a large sheet paper and bake them before everything else (salmon and asparagus) for like 15 minutes. Maybe more, depending on your oven.

When it comes to cooking time, you must know that this can differ because we have different ovens and even dough temperature can be the same maybe the programs are different, you know? Anyway, something around 10-20 minutes the potatoes must stay alone in the oven.

This is how my potatoes looked like after 20 minutes at 200°C.

While the potatoes are in the oven, start preparing the salmon and asparagus, meaning washing and cutting the ends to the asparagus, everything needs to be ready for the next step. Season the salmon with salt and pepper, maybe some italian herbs blend too.

Also, you must do the dressing that you'll pour onto the salmon.

In a small pan, melt the butter and then add the rest of the ingredients: honey, dijon mustard, Italian herb blend. Mix them up.

After those 15 minutes, take the potatoes out of the oven. Move them on a side and put on the same sheet pan the salmon and asparagus.

Brush the dressing you just made onto salmon fillets.

Don't forget to put some thin lemon slices with the asparagus. I almost forgot.

Then put the tray back in the oven for another 15-20 minutes. I baked everything for 20-22 minutes. I wanted to be sure salmon is cooked through.

And this iis how it turned out! Fantastic!

Overall, this recipe is a keeper! Other than cooking time, which I found to be a bit short in the original recipe, I dont have anything to comment. Also I baked the potatoes alone for 20 minutes, not just 10 minutes.

This is it! Making this recipe for the first time, will take a bit longer because you need to 'digest' all info here. This is a classic episode for every recipe out there, with ingredients and instructions reading. Am I right?
But after making it once, this will be ready in no time!

I really loved the recipe! Easy to make, healthy, oven baked, one tray, nutritious ingredients and DELICIOUS! Everything you want on a recipe!
You can even have a salad on the side! Yumm!

In the next coming weeks I really hope to try as many recipes I can because honestly, I feel I'm bored in the kitchen. I need some new tastes, new spices, new combinations!

Well, I guess so! I mean, for sure! Over the time, I cooked many different recipes with frozen salmon and always turned out great! But you can try it, why not? And you get to decide if you like it or not....
