Simple but Tasty: Cole Slaw with a Mexican Twist

I don't really cook very elaborately here recently, to be very honest. Usually, it's just an easy meal, like omelets, easy pasta, a soup, or whatever we have lying around in the fridge.
It's often so hot here, that I can't bare having the stove going for extended times and also actually stand next to it. So at most, I'll throw something in the oven and walk away for an hour or so.

So simple things, like a salad or something that doesn't need any cooking, are my favorites to make.
I still had half a white cabbage in the fridge, and decided to do something different with it.

The recipe is really quite simple:

  • About half or a quarter (depending on the people) of white cabbage, shredded
  • 2-3 green tomatoes
  • half a lime, juiced
  • a handful of cilantro/coriander
  • one peeled clove of garlic
  • salt & pepper to taste

I cut the cabbage into fine strips fist, and then I cut them into smaller pieces, but if you have kitchen tools to do this, that's fine too. I personally don't like the hassle and it's usually cut in no time.

Then I wash the green tomatoes, and cut them into smaller pieces. The lime is juiced.
I use the green tomatoes, lime juice and cilantro to make the dressing. Sometimes, I also add some balsamic vinegar to it, but this time I didn't have it in the home, so I just used these ingredients, which is perfectly fine.

I cut the cilantro, and then put it in the blender, together with the tomato pieces, garlic, and the lime juice and blend it until all the cilantro is just green and no more leaves can be seen.
It takes about 10 seconds with my hand blender.

I then add the dressing to the cabbage, add salt and pepper to taste, and mix the whole thing well.
Personally, I think it tastes best when you let it sit for an hour or so (in the fridge) before serving, but it can be eaten right away.

I love it on its own, but of course, feel free to add it as a side dish to BBQ's, meat and fish dishes. It literally goes with everything!
And it's so quick to make! It takes me about 10 minutes from beginning till end.
Great for large families with not a lot of time!
