Today I decided to make something special for my mum, my mum is a big fan of vegetables dish.. She is so obsessed with vegetables and wouldn't do without adding it to her meal irrespective of the meal she is cooking be it rice or pasta.
This evening, I decided to make her favorite Efo Riro and Semolina, this is a delicious recipe, easy to make and enjoy by millons of people especially the western Nigerians.
Efo Riro soup is a nutritious and well-known Yoruba vegetable soup that is popular not just among Yorubas but also among other Nigerian ethnic groups. Efo Riro is my local traditional dish, it best enjoy with Semovita, you can as well enjoy with any kind of swallows or even flow well with white rice.
Ingredients
Green Leaf (Efo Shoko)
Chicken
Pomo
Beef
Dried Fish
Crayfish
Red Pepper, Tomatoes and Onions.
Onions
Palm Oil.
Beef Seasoning
Maggi and Salt
Step 1: After washing and rinsing the dry fish, beef, and chicken, season the ingredients with salt and pepper, then add the sliced onions and cook on a low medium heat.
Step 2: Place a pan on high medium heat, add the palm oil, and heat for 1 minute. Add the sliced onions and cook for 2 minutes, then add the blended Pepper and fry for another 2 minutes.
Step 3: Add the chicken and beef and simmer for a few minutes before adding the Maggi and the seasoned pomo.
Step 4: Add the chicken and beef and simmer for a few minutes before adding the Maggi and the seasoned pomo.
Step 5: Make sure you stir it all together; the term Riro comes from the word Riro, which means "to stir or mix together" in Yoruba. After that, take it off the heat and create your Semovita.
After you've prepared the semolina or swallow of your choice, Now turn off the heat, dish out the Efo Riro soup and the Semolina, make sure you serve with the chilled drink or juice... enjoy and don’t forget to share with your neighbors 😁
