Hello foodies!!!
My parents tell me that when I was a kid I didn't want to eat chocolate 😵... though I don't remember it. I guess one of their biggest regrets was that they insisted until I managed to try it 😅 and now I can't get enough.
Since I saw this week's contest I knew I had to participate ❤️, and although the recipe I present to you must not be an innovation 😆, I didn't look for ideas on the internet, I just went with my instinct and the desire to eat a delicious dessert. I tell you how I did it and I hope you like it very much....
For the sponge cake:
- Eggs, 4 units
- Flour, 1 cup
- Melted chocolate, 100g
- Oil, 1/4 cup
- 1/3 cup cocoa powder
- Sugar, 1/4 cup
- Baking powder, 1/2 tbsp.
For the filling:
- Dulce de leche, 1/2 cup
For the syrup:
- Cocoa powder, 4 tablespoons
- Milk, 1 cup
- Sugar, 1 tablespoon
For the topping:
- Bitter chocolate, 70g
- 1 cup heavy cream
- Sea salt, 1/2 tablespoon
The first thing I did was to separate the egg whites from the yolks in two different bowls. With the hand mixer I began to whip the egg whites at high speed until they formed soft peaks. I added the sugar and continued beating until the mixture took consistency. I have found a trick I like to use to test that the egg whites are well whipped is to flip the bowl over. However, this trick is dangerous if you are not quite sure 😂.
If you want the cake to be sweeter just add more sugar to the mixture, but as I was going to use a very sweet filling I chose to put little sugar at this point.
Then I put the oil of the recipe in a bowl with the chocolate, I used milk chocolate, but you can choose another one. I put this bowl in a double boiler to melt, but you can also put it in the microwave.
Then I beat the yolks a little at high speed, so that they acquire air, until they were foamy. At this point the chocolate was already cold and I mixed it with the beaten yolks. First a little of the yolks in the chocolate, to help mix and then I mixed everything together, until a homogeneous mixture was obtained.
Next was to mix the whipped egg whites with the chocolate and egg yolks. The key here is to use encircling motions so that no air is lost and the mixture remains foamy. Then I sifted the flour, cocoa and baking powder over the mixture and integrated everything until it was smooth.
Then I transferred half of the mixture to a greased and floured baking pan and baked in the oven at 180°C for 25 minutes. Since I only have one mold, I had to repeat this process to make two cakes. For some reason they were a different color, but this time nothing was burnt 💪.
If you have two molds you can bake them at once, or in a larger mold you make a single cake and then cut it as you prefer.
I made a syrup by putting the milk, cocoa and sugar on the fire. I did not leave it very thick but you can do it as you like. I soaked both cakes with plenty of syrup, because we love it very wet, but this depends on your preference.
For the filling use dulce de leche without fear, which is what will give the most sweetness to this cake. You can also use custard or fruit jam (I would like to try with tangerine 🤤). I hope you are not impatient and do this step with the ingredients cold, because I burned myself with the dulce de leche 😔.
For the topping, I heated the heavy cream and added the bitter chocolate until completely melted. You put this mixture aside with cling film on top (so it doesn't form a crust) and let it cool well.
Once again I was overcome by desperation and did not let the topping cool well, so it was very difficult to handle. But the end result did not disappoint me 😀 I think it looks rustic and handmade 🤣.
Finally I put the chocolate cream on top of the biscuits and let it slide down the sides. I sprinkled sea salt on top, which gives it a very special touch.
I let it cool overnight in the refrigerator, so that the frosting would take consistency.
If you love chocolate as much as I do, you will love this cake. It is chocolatey all over, moist, sweet, salty, smooth....
I have no more words to express how much we liked it, you can eat it alone or combine it with fruits. I chose to eat it with strawberries and I loved the combination.

Cuentan mis padres que cuando era niña no quería comer chocolate 😵... aunque yo no lo recuerdo. Supongo que uno de sus mayores pesares mientras crecía fue que insistieron hasta que lograra probarlo 😅 y ahora no tengo suficiente.
Desde que vi el concurso de esta semana sabía que tenía que participar ❤️, y aunque la receta que les presento no debe ser una innovación 😆, no busqué ideas en internet, solo me dejé llevar por mi instinto y el deseo de comer un postre delicioso. Les cuento cómo lo hice y espero que les guste mucho...
Para el bizcocho:
- Huevos, 4 unidades
- Harina, 1 taza
- Chocolote fundente, 100g
- Aceite, 1/4 taza
- Cacao en polvo, 1/3 de taza
- Azúcar, 1/4 de taza
- Polvo para hornear, 1/2 cucharada
Para el relleno:
- Dulce de leche, 1/2 taza
Para el sirope:
- Cacao en polvo, 4 cucharadas
- Leche, 1 taza
- Azúcar, 1 cucharada
Para la cubierta:
- Chocolate amargo, 70g
- Crema de leche, 1 taza
- Sal marina, 1/2 cucharada
Lo primero que hice fue separar las claras de las yemas de los huevos en dos bowl diferentes. Con la mezcladora de mano comencé a montar las claras a velocidad rápida hasta que formara picos suaves. Le agregué el azúcar y continué batiendo hasta que la mezcla tomó consistencia. Un truco que me ha gustado para probar que las claras están bien montadas es voltear el recipiente. Sin embargo, este truco es peligroso si no estás bien seguro 😂.
Si quieres que el bizcocho quede más dulce solo debes poner más azúcar a la mezcla, pero como iba a usar un relleno muy dulce elegí poner poca azúcar en este punto.
Luego puse en un bowl el aceite de la receta junto al chocolate fundente, yo usé chocolate con leche, pero tú puedes elegir otro. Este bowl lo puse en baño María a derretir, pero también puedes ponerlo en microondas.
Luego batí un poco las yemas a alta velocidad, para que adquirieran aire, hasta que estuvieron espumosas. En este punto ya el chocolate estaba frío y lo mezclé con las yemas batidas. Primero un poco de las yemas en el chocolate, para ayudar a mezclar y luego mezclé todo junto, hasta obtener una mezcla homogénea.
Lo próximo fue mezclar las claras montadas con el chocolate y las yemas. La clave aquí es usar movimientos envolventes para que no se pierda aire y se mantenga espumosa la mezcla. Luego cerní la harina, el cacao y el polvo para hornear sobre la mezcla y se integra todo hasta que quede sin grumos
Posteriormente pasé la mitad de la mezcla a un molde engrasado y enharinado y llevé al horno a 180°C por 25 minutos. Como solo tengo un molde tuve que repetir este proceso para hacer dos bizcochos. Por alguna razón me quedaron de diferente color, pero esta vez no se quemó nada 💪.
Si tienes dos moldes los puedes hornear de una vez, o en un molde más grande haces un solo bizcocho y luego lo cortas como prefieras.
Hice un sirope poniendo al fuego la leche, el cacao y el azúcar. No lo dejé muy espeso pero tú puedes hacerlo como más te guste. Bañé ambos bizcochos con abundante sirope, porque nos encanta bien mojadito, pero esto depende de tu preferencia.
Para rellenar usa el dulce de leche sin miedo, que es lo que dará el mayor aporte dulce a este cake. También puedes usar crema pastelera o mermelada de frutas (quisiera probar con mandarina 🤤). Espero que no seas impaciente y hagas este paso con los ingredientes fríos, pues yo me quemé con el dulce de leche 😔.
Para la cubierta calenté la crema de leche y le agregué el chocolate amargo hasta derretirlo por completo. Reservas esta mezcla con un film por encima (para que no se forme costra) y dejas enfriar bien. Una vez más me venció la desesperación y no dejé enfriar bien la cubierta, por lo que fue muy difícil de manejar. Pero el resultado final no me desagradó 😀 creo que se ve rústico y artesanal 🤣
Finalmente puse la crema de chocolate encima de los bizcochos y dejé que se deslizara por los lados. Esparcí sal marina por encima, que le da un toque muy especial. Dejé enfriar por una noche en el refrigerador, para que la cobertura agarrara consistencia.
Si te gusta tanto el chocolate como a mí, amarás este cake. Queda chocolatoso por todas partes, húmedo, dulce, salado, suave... no tengo más palabras para expresar cuánto nos gustó, puedes comerlo solo o combinar con frutas. Yo elegí comerlo con fresas y me encantó la combinación.

Me parece excelente haberlo rellenado, pues es una sorpresa adicional, y la colocación de las fresas como adorno, le da una pinta estupenda, además de que contrasta el sabor ácido de la fruta con el dulzor del pastel.
