I've been away from Hive for too long, but I haven't stopped cooking or thinking about you 💚. I love the recipe I want to share with you today for two reasons: it's a Turkish dish (I love oriental food) and a friend of mine taught it to me in Havana, so cooking it brings back moments we spent together 😍 and that's the magic of cooking, right? Let's move on to the recipe:

First of all, the yeast must be activated by heating the cup of water until it has a temperature of 37°C, approximately. To this water, add 1 tablespoon of sugar from the recipe, then add the yeast and stir until everything is dissolved. Then let it stand for 10 minutes or until bubbles are observed.
In a bowl put the flour, reserving a little for kneading (I left 1 cup), the salt for the dough, the sugar and mix everything very well. Add the activated yeast, the oil, the yogurt, the egg and integrate everything until you have a consistent dough. Then transfer it to a smooth surface and knead it with your hands for 10 minutes. Finally, it is left to rest in a covered container with a cloth or plastic film for one hour or until it doubles in size.

While the dough is left to rise, the filling is prepared, for which the oil is heated in a pan. Then add the garlic, onion and bell pepper and let them sauté until they release their aroma. Later add the tomato, the salt, the chicken and let it reduce for 5 minutes. Next add the paprika, parsley and cumin and cook for another 5 minutes. It is recommended to let the stuffing dry, so that the sauce does not interfere in the assembly of the bread.

The next step is to divide the dough into portions, which will depend on the size you want, I divided it into 8 portions but it seemed too big for an individual loaf, so I made them into 16 portions. Take each piece of dough and stretch it into an oval shape, you can use a rolling pin or a bottle to do this. Then add the filling, leaving at least 1 cm at the edges. Next, join the edges at the ends, giving the bread the typical shape of a small boat. You can put grated cheese on top and it is delicious.

📝Tip: when you have stretched the dough it is better to put the bread on the tray where you are going to bake it and then put the filling, because moving the bread with the filling is very delicate.

Arrange the breads on a greased and floured tray and let them rest for at least 20 minutes. Before baking, the edges of the bread can be painted with egg yolk to make them look golden brown. Then bake in a preheated oven at 180°C (350°F) for 30 minutes, or until the bread is golden brown.

This bread is delicious with any filling, it is very soft and a perfect option to share with friends, either in its individual version or as large loaves to share. I hope you liked the recipe and that you are encouraged to try it.

Llevo demasiado tiempo fuera de Hive, pero no he dejado de cocinar ni de pensar en ustedes 💚. La receta que les quiero compartir hoy me encanta por dos razones: es un plato turco (adoro la comida oriental) y me lo enseñó una amiga en La Habana, así que al cocinarlo revivo momentos que pasamos juntas 😍 y esa es la magia de la cocina, verdad?? Pasemos a la receta:

En primer lugar se debe activar la levadura, para ello se debe calentar la taza de agua hasta que tenga una temperatura de 37°C, aproximadamente. A esta agua se le añade 1 cucharada de azúcar de la receta, posteriormente se agrega la levadura y se remueve hasta disolver todo. Luego se deja reposar por 10 minutos o hasta que se observen burbujas.
En un recipiente se debe poner la harina, reservando un poco para amasar (yo dejé 1 taza), la sal de la masa, el azúcar y se mezcla todo muy bien. Se agrega la levadura activada, el aceite, el yogurt, el huevo y se integra todo hasta tener una masa consistente. Luego se pasa a una superficie lisa y se amasa con las manos durante 10 minutos. Finalmente se deja reposar en un recipiente tapado con un paño o film plástico durante una hora o hasta que duplique su tamaño.

Mientras se deja elevar la masa se prepara el relleno, para lo cual en una cazuela se pone a calentar el aceite. Luego se añade el ajo, la cebolla y el pimiento y se dejan saltear, hasta que liberen su aroma. Posteriormente se añade el tomate, la sal, el pollo y se deja reducir por 5 minutos. Después se agrega la paprika, perejil y comino y se cocina por otros 5 minutos. Es recomendado que se deje secar el relleno, para que la salsa no interfiera en el armado del pan.

Lo próximo es dividir la masa en porciones, que dependerán del tamaño que se desee, yo la dividí en 8 porciones pero me parecieron muy grandes para un pan individual, así que las convertí en 16 porciones. Se debe tomar cada bolita de masa y estirarla en forma ovalada, para ello se puede usar un rodillo o una botella. Posteriormente se agrega el relleno, dejando al menos 1 cm en los bordes. Luego en los extremos se unen los bordes, dando al pan la típica forma de barquito. Se puede poner queso rallado por encima y queda delicioso.

📝Tip: cuando hayas estirado la masa es mejor armar el pan con su relleno sobre la bandeja en que vayas a hornear, porque mover el pan con el relleno es muy delicado.

Se acomodan los panes en una bandeja engrasada y enharinada y se dejan reposar durante al menos 20 minutos. Antes de pasar al horno se puede pintar los bordes del pan con yema de huevo, para que luzcan doraditos. Luego se meten a hornear en horno precalentado a 180°C, durante 30 min, o hasta que el pan se vea dorado.

Este pan queda delicioso con cualquier relleno, es muy suave y una opción perfecta para compartir con amigos, ya sea en su versión individual o como panes grandes para compartir. Espero que les haya gustado la receta y que se animen a probarla.
