Heeeyho Readers! Coming by with my favorite post-cycling meal!
Gastronomy posts are the hardest to write! Whenever I remember to write about a meal it's too late. And I'm always starving. Or in desperate need of those macros, like after intense exercising — that first half hour is crucial. For the reasons aforementioned the photos always turn out... unprofessional, for lack of a better adjective. I hope the reader doesn't mind.
I call this dish the Giganormous Bombamix. It's packed with all the macros anyone needs, but most importantly: it's fast to cook! Toss everything into the pan and voila. Let's start from the ingreedients.
I always change and adapt this dish; sometimes I add carrots, other times I change the greens. The main ingredients, however, always include sweet potatoes, mushrooms, bell pepper, ricotta, and eggs.
Here's what I used this time for two servings.
Ingredients
- Mushrooms (x4)
- Ricotta cheese (a fat slice)
- Eggs (x2)
- Carrots (x1)
- Sweet potatoes (x1)
- Bell pepper (half)
- Spinach (only the leaves)
- Seasoning: curry powder, salt, pepper and olive oil
Preparing
There's no secret in a dish that basically consists of tossing everything in a pan. It's all about the feeling when it comes to times.
- Cut the sweet potato, the carrot, and the bell pepper as follow
- In the mean time pre-heat the olive oil (I use slow burn)
As soon as the olive oil is heated you can add the first batch of ingredients (sweet potato, carrot, and bell pepper). Throw everything into the pan and move on to cut the mushrooms.
Mushrooms tend to shrink a lot, so if you want to add more it's up to liking. Add the mushrooms to the pan and get ready for the seasoning.
Seasoning is kinda personal. I like to add curry powder, paprika, salt, olive oil (on top of the one used for "frying"), and pepper (not in the picture). I also may add more according to taste. Mix and cover the pan. Use slow burn. Move on to cut the spinach.
Mix the ingredients from time to time. There's no perfect cooking time; I guide myself by the sweet potato (when it begins to soften you can add the eggs).
- Add the eggs as soon as the sweet potato begins to soften
- Cover to let the eggs cook
- Once the eggs are cooked add the cheese on top
- Cover again
The last step is to add the spinach. I don't like to let the spinach overcook, so a few minutes should be enough before it's all ready-o-mama.
I like to use slow burn throughout the process to avoid overcooking. It's mostly based on feeling; you'll notice the sweet potato becoming soft etc etc. Don't let the eggs burn and the rest should be fine xD
Here's the final result
This amount was enough for two. The Giganormous Bombamix is packed with proteins, carbohydrates, vitamins and minerals. It's a great post-training lunch for those who train during the morning. As a cyclist, I love it.

It's really looking delicious. All are my favorite Ingredients. Specially the white cheese. We call ponir here. Amazing test.
Ponir? I tried to find it but only found paneer. Is it the same? Looks just like the one I used! Low fat and super high in protein.
I LOVE throw together meals like this - they're so easy. Chop chop chop, cook, job done. Especially when loaded with chilli sauce, which I just love! Do you get the eggs from your Dad's chooks?
Not here, only when I'm in the ranch. The chicks are just starting to lay eggs though (those awesome super yellow yolk). I love how real chicks lay real eggs compared to the big farm ones.
Oh, and I love the chop chop throw done! I think it comes from my backpacking/cycling experiences with only one pan.
Yeah for sure! Less mess less fuss. Most of my meals are like that, except I also use the rice cooker for rice and beans etc
Do you cook beans in a normal pan? Here in Brazil we use the pressure pan to cook our famous 'feijoada'. Also for lentils.
Oh yes a pressure cooker would be ideal!

I love meal like this. It's simple, nutritious, and cheap. At first I read it as post-workout meal but I guess it can be that way too, post-workout meal😃
And doesn't make a mess in the kitchen! I hate washing pans \o\
It's super cheap, though mushrooms are kinda pricey over here 2usd for a package. I don't know the full price, but it's affordable and waaaaaaaay better than some fast food @ around the same price.
