Chicken Adobo

Hi food buddies here in hive!
Happy mother's day to all moms out there.
Today I'm going to share a different variety of adobo and the main ingredient is chicken.

Here are the ingredients:

For Marinade:
800g Chicken Breast, adobo cut
1/4 Cup Soy Sauce
1 Tablespoon Calamansi Juice
1 Medium Onion, minced
3 Gloves Garlic, minced
2 Tablespoon Cooking Oil
1 Large Tomato, sliced diagonally
3 Bay Leaves
1/4 Cup Water
1 teaspoon Fish Sauce
2 Tablespoon Soy Sauce
Saute onion and garlic. Next saute tomato, when mash it when it's cooked.

Saute marinated chicken, bay leaves and season with pepper. then if chicken becomes light brown add water, soy sauce and fish sauce to taste. Let it simmer until it dries up. Stir occasionally .

This chicken adobo is what we call "Tuyo/Pinatuyuan na Adodo", it's the opposite of Saucy Adobo. I personally prefer this kind of adobo because when the soy sauce dries up with the oil and spicies it taste so delicious , as well as the chicken.
Let's eat this with hot steam rice!
