Un gran saludo querida comunidad de @FoodiesBeeHive. El día de hoy quiero mostrarles como preparé el pernil para celebrar la Navidad con mi familia.

Los ingredientes utilizados fueron los siguientes: Un pernil de 14 Kg, sal fina y gruesa. mostaza, hojas de laurel, romero, pimienta negra, comino, ajo y paprika.
The ingredients used were the following: A 14 kg leg, fine and coarse salt. mustard, bay leaves, rosemary, black pepper, cumin, garlic and paprika.
En primer lugar descongelé el pernil y luego le quité la piel. Posteriormente lo metí en agua con hielo, le agregé un kilo de sal gruesa, hojas de laurel y romero. Lo tapé y lo reservé alli 12 horas, revisando constantemete para añadirle más hielo.
First I thawed the leg and then removed the skin. Later I put it in ice water, I added a kilo of coarse salt, bay leaves and rosemary. I covered it and reserved it there for 12 hours, constantly checking to add more ice.
Aproximadamente a las 6 de la mañana del día 24 de Diciembre lo saqué del balde de agua le quite la sal y le coloqué la mostaza, sal y los condimentos.
At approximately 6 in the morning on December 24, I took it out of the bucket of water, removed the salt and added the mustard, salt and seasonings.
Seguidamente preparé el fuego y metí el pernil por aproximadamente 15 horas para que se cocine lentamente con el humo.
Then I prepared the fire and put the leg in for approximately 15 hours so that it cooks slowly with the smoke.
A mediodia ya el pernil estaba así...

A las 9 de la noche ya estaba listo el pernil para la cena de Navidad, lo acompañamos con hallacas, pan de jamón y ensalada.
At 9 o'clock in the evening the leg was ready for Christmas dinner, we accompanied it with Hallacas, ham bread and salad.
