A pleasure to greet this distinguished community. Today I will show you how to prepare some magnificent smoked meats, I hope you like my recipe !! En esta oportunidad utilicé varios cortes de carne tales como: roast beef, paleta y cuadrada, además de pollo y unas chuletas y paticas de cerdo. This time I used several cuts of meat such as: roast beef, shoulder and square, as well as chicken and some chops and pork legs. Para condimentar las carnes hice una mezcla de comino, paprika, ajo molido y pimienta y se la coloqué a todos los cortes además de la sal. To season the meats, I made a mixture of cumin, paprika, ground garlic and pepper and added it to all the cuts in addition to the salt. Luego de que las carnes están condimentadas, comienzo a preparar el fuego en mi ahumador. Coloco algunos trozos de cartón y maderar para encender la leña rápidamente. After the meats are seasoned, I start to make the fire in my smoker. I put some pieces of cardboard and wood to light the firewood quickly. Una vez que el fuego está listo procedo a meter las carnes en el ahumador y lo cierro para que el humo haga su trabajo. Esta preparación es un poco lenta, así que debes tener paciencia y esperar. Once the fire is ready, I proceed to put the meats in the smoker and close it so that the smoke does its job. This preparation is a bit slow, so you have to be patient and wait. Mientras las carnes están en el ahumador me relajo y disfruto con mi familia una rica cerveza bien fría!! While the meats are in the smoker I relax and enjoy with my family a nice cold beer !! Pasada aproximadamente una hora reviso el estado de mis carnes y lo cierro rápidamente para no perder el calor interno del ahumador. After about an hour I check the state of my meats and close it quickly so as not to lose the internal heat of the smoker. Luego de aproximadamente 2 horas más, ya el pollo y mis carnes están listas para comerlas, en esta oportunidad simplemente la comimos con pan y pepinillo, estilo picada. Pueden observar como el humo hizo que la carne quedara totalmente rosada y con una franja roja alrededor, les puedo decir que el sabor que tiene es simplemente una locura!!! After about 2 more hours, the chicken and my meats are ready to eat, this time we simply ate it with bread and pickle, minced style. You can see how the smoke made the meat totally pink and with a red stripe around it, I can tell you that the flavor it has is simply crazy!
