Vetkoek/Fatcake
Hallo all the foodies on hive!!
It's Monday and I'm not in the mood for a big dinner. Just something fast and easy. But believe me this is my go to and lucky my family loves fatcake to.
Vetkoek is a traditional South African fried dough. Essentially it is a crisp deep fried disc or ball. One can use baking powder but this is a yeast dough. Whatever the method of production it will always be a winner in any home. You can eat it with almost anything sweet or savoury fillings. Today i made same plain ones and some with red viennas.
For the best experience nipping at the heels of the delicious vetkoek should be eaten fresh straight out of the oil almost to hot to handle. A personal favorite is a warm fatcake with butter.
Ingredients

Cake flour 4 cups
instant yeast 5g
luke warm water
2tsp white sugar
pinch of salt
good quality sunflower oil 2L
There will always be left over oil but you can re-use it.
Method

Combine all the ingredients in one bowl add luke warm water small amounts at a time.
Then start knead the dough by hand and knead the dough until smooth.
When the is done kneaded put the lid back on the bowl and let it rest for one hour in a dry warm place. After an hour the dough will be ready and you can start preparing for the baking or frying any one you want to call it.
Lightly oil an area on your kitchen table or counter surface divide in half. You can make any shape you want i prefer to make squares.
The is no such thing as a perfect fatcake only a perfect taste. place it on the oiled service. Start heating up the oil and please don't over heat the oil. always remember safety first warm oil is very dangerous. Once the ideal temperature is reached add the dough to the oil and never over crowd the pot.
It will take about four minutes to turn golden brown the take a fork and turn the fatcake to the other side for even cooking when it is an even color on both sides it's ready to take out off the oil. Serve and enjoy the fatcake immediately to great acclaim.
