Gluten Free King Ranch Chicken

Gluten Free King Ranch Chicken Casserole

This casserole is a classic for a reason. It has creamy chicken and crunchy Doritos.

It feeds a family of five, and on a budget too! Additionally, the kids can help prepare this meal and have a sense of accomplishment in their helping with dinner. They might enjoy breaking the Doritos or helping layer the ingredients.

This version is gluten free, but you can prepare it traditionally if you like, just swap the cans of soup for your favorite kind.

Ingredients

  • 4 cups shredded or chopped cooked chicken (can use canned chicken, leftovers, or rotisserie chicken)
  • 1 bag Nacho Cheese Doritos broken not crushed (store brand is just fine too)
  • 1 large bell pepper chopped (1 ½ cups) this can be any color
  • 1 large onion chopped (1 cup)
  • 2 cans Gluten Free Cream of Chicken Soup (or one can of cream of chicken and one can of cream of mushroom)
  • 1 teaspoon chili powder
  • 10 oz diced tomatoes with green chiles undrained (1 can)
  • 1 clove garlic minced (not pictured)
  • 2 cups shredded sharp cheddar cheese 8 oz
  • 1 small bunch of green onions, diced. ½ cups

Instructions

Preheat oven to 375 degrees

  1. Layer bottom of 13x9 baking dish with Doritos.
  2. In large bowl, mix all ingredients except Doritos and cheese.
  3. Add layer of chicken mixture on top of Doritos.
  4. Add layer of cheese.
  5. Add layer of Doritos.
  6. Repeat steps 3, 4, and 5 until all ingredients are used.
  7. Bake at 375 for 30 minutes.
  8. Allow to rest for 10 minutes.
  9. Serve hot and enjoy!
