Gluten Free Pizza Spaghetti

When you don’t know if you want pizza or spaghetti, you mix it up and make something delicious! It may sound weird to some people, but don’t knock it until you try it. Personally, I love pizza and I love spaghetti. One day I decided to try mixing it up together. This recipe is so customizable because the sauce and toppings can be whatever you like. You can make just about any variation of pizza pasta you like. The noodles will absorb the flavors of the sauce and toppings. My kids love the pepperoni one the best, so that’s the one I will be writing about this time. This recipe makes a 13x9 baking dish full, so there is plenty to share or keep for leftovers. It reheats easily and tastes great the next day too. I know it looks like a lot, but its pretty easy to make.

Ok, on to the fun stuff!

Here is what you will need to do -

Gather your ingredients:

12 oz box Barilla brand gluten free spaghetti noodles found here. (I chose this brand because it will hold up its integrity while reheating in the microwave or oven. There are many other gluten free noodles you can use though.)

45 oz jar Ragu sauce found here. (I use the chunky garden combination sauce because it gives a full serving of vegetables in each serving size, but you can use whatever you want.)

16 oz of Mozzarella and Provolone cheese blend (this one I am not too particular about, I use Great Value brand)

12 – 16 oz of sliced pepperoni (again, I used Great Value brand for this one)

Seasonings – ½ tablespoons of each of the following: salt, pepper, garlic powder, onion powder, basil, thyme, oregano, and rosemary

Optional – ½ tablespoon of red pepper flakes

Ok, now that we have our ingredients set out, we can start to cook.

  1. Preheat your oven to 375 degrees. While the oven is preheating, prepare the noodles to the package directions. Be sure to add salt to your water. This is a very important step. This step adds a tiny bit of saltiness to the sauce, and gives it a good depth of flavor.

  1. While those are boiling, you will be assembling the sauce and pepperoni. Personally, I like to stack the pepperoni and dice it into small pieces, but you can leave it in slices if you want to.

  1. Pour about half of the jar of sauce into a 13x9 baking dish and add about three quarters of the of the pepperonis and the seasonings. Mix well.
  2. When your noodles are al dente, use a measuring cup to remove about ½ cup of pasta water and set aside. Now drain and pour your noodles into the 13x9 dish.

  1. Using a fork, or two, mix the pasta with the sauce. When thoroughly mixed, add remaining sauce and three quarters of both cheeses and mix again.
  2. Now that the noodles, sauce, cheese, and pepperonis are mixed together in the dish, top the dish with remaining cheese and remaining pepperonis. Sprinkle a little extra seasoning on top if you want to.

  1. Place in center rack of preheated oven and bake for 20 minutes.
  2. Remove from oven and let cool for 10 minutes before slicing and eating. It will be bubbling hot, be careful.

This does look delicious, I need to try to make it one night. How was clean up afterwards?

It is really tasty. If you make it, let me know if you like it. Clean up is fairly easy, the pan doesn't need any non stick spray or anything. The leftovers store really well and re-heat easily.
