Hello everyone! I hope you are well, today I bring you a delicious and very easy to make chocolate cookies recipe that I love and I hope you can make it and try it.
To make approximately 80 cookies of 10g we will need:
350g flour65g cornstarch or corn starch180g sugar170g butter at room temperature1 egg60g cocoa powder8g (1 teaspoon) vanilla or chocolate essence8g (1 teaspoon) of baking powder or baking soda180g of chocolate (optional).

Preheat the oven to 180°C
In a bowl we are going to mix the sugar and butter for a few minutes until they are well integrated and we have a creamy mixture. I do it with a large spoon but you can do it in the mixer for more convenience.

Now add the egg and vanilla and beat carefully, this step takes a little longer because the butter fat repels the liquid from the vanilla or the essence of your choice but with patience it is very smooth.

We are going to use a sieve to sift the cocoa into the mixture, cocoa reacts a lot to moisture so it is likely to have some lumps and we don't want that in the batter. I like to integrate in two spoonfuls at a time.
Four
We repeat the sifter process but this time with the flour and the rest of the powdered elements. A very good tip for handling the cornstarch is to combine it with the baking powder and the flour, since it is very powdery and thus avoid disasters. Again we integrate this in two tablespoons at a time.
Before going to step five it is good to know that these are crunchy cookies, if you are going to share them with grandparents or children who are just growing teeth you can add a small spoonful of water or milk, it will remain crunchy but softer.
Five
Let the dough rest for ten minutes while we grease our tray with butter and flour.
To stretch the dough I like to use flour on the table and plastic wrap on top to prevent them from sticking, you can use a bag but make sure it is very clean. I leave the thickness of the cookies to your taste. To cut them you can use a shape cutter or even cut them with a knife (be very careful).
Bake in the oven for fifteen minutes or until golden brown. Let them cool before removing them from the tray. I like to cover them with chocolate to enhance the flavor.

Dos
Ahora añadimos el huevo y la vainilla y batimos con cuidado, Ă©ste paso tarda un poquito mĂĄs porque la grasa de la mantequilla repele el lĂquido de la vainilla o la esencia que elijas pero con paciencia queda muy suave.
Tres
Vamos a usar un colador para cernir el cacao en la mezcla, el cacao reacciona mucho ante la humedad asĂ que es probable que tenga algunos grumos y no queremos eso en la masa. A mĂ me gusta ir integrando de a dos cucharadas.
Cuatro
Repetimos el proceso del colador pero Ă©sta vez con la harina y el resto de elementos en polvo. Un consejo muy bueno para manejar la fĂ©cula de maĂz es unirla con el polvo de hornear y la harina, ya que es muy polvosa y asĂ evitar los desastres. De nuevo integramos esto de a dos cucharadas.
Antes de ir al paso cinco es bueno que sepas que son galletas crujientes, si vas a compartirlas con abuelos o niños a los que apenas les estån creciendo los dientes puedes añadir una cucharada pequeña de agua o leche, seguirå crocante pero mås blanda.
Cinco
Dejamos reposar la masa diez minutos mientras engrasamos nuestra bandeja con mantequilla y harina.
Para estirar la masa a mĂ me gusta usar harina en la mesa y un plĂĄstico encima para evitar que se peguen, tĂș puedes usar alguna bolsa pero asegĂșrate de que estĂ© muy limpia. El grosor de las galletas lo dejo a tu gusto. Para cortarlas puedes hacerte con un cortador de formas o incluso cortarlas con el cuchillo (ten mucho cuidado).
Llevamos al horno quince minutos o hasta que las veas doradas. DĂ©jalas enfriar antes de despegarlas de la bandeja. A mĂ me gusta cubrirlas con chocolate para aumentar el sabor.
