¡Buenos días amigos!

Ayer preparé para el desayuno de mi pequeña Abby y el mío empanadas de avena rellenas con un guiso de pollo y vegetales, para Alys no porque ya estaba en el colegio con una comida totalmente diferente que me pidió, lo que más me gusta de ésta receta es lo fácil que es moldear la masa de harina de avena para realizar las empanadas y lo crujientes que quedan.

Las cocine en el horno eléctrico quería freírlas como las tradicionales pero opté por volverlas más saludables sin dejar de ser deliciosas.

Yesterday I prepared for breakfast for my little Abby and me.
oatmeal empanadas stuffed with a chicken and vegetable stew,
for Alys not because she was already at school with a totally different meal that she asked me, what I like most about this recipe is how easy it is to mold the oatmeal dough to make the empanadas and how crispy they are.

I cooked them in the electric oven, I wanted to fry them like the traditional ones but I opted to make them healthier while still being delicious.

Ingredientes:
200gr de Pollo desmenuzado
1/4 de Pimentón
1/2 cebolla
1 zanahoria pequeña
1 taza de harina de avena
100ml de agua
1/2 cucharadita de sal para el relleno 1/8 o pizca para la masa de avena
1/2 cucharadita de adobo
1/2 cucharadita de aliño
25ml de aceite para el relleno y 50ml para la masa de avena

Ingredients:
200gr of shredded chicken
1/4 of paprika
1/2 onion
1 small carrot
1 cup of oat flour
100ml water
1/2 teaspoon salt for the stuffing 1/8 or pinch for the oatmeal dough
1/2 teaspoon marinade
1/2 teaspoon of seasoning
25ml of oil for the filling and 50ml for the oatmeal dough

Primero lavé los vegetales y retiré la cáscara del zanahoria y la primera capa de piel de la cebolla, por la parte más gruesa del rallador corté cada vegetal.

First I washed the vegetables and removed the peel from the carrot and the first layer of skin from the onion, and cut each vegetable on the coarsest part of the grater.

En una paila añadí el aceite y una vez que estuvo caliente sofreí la cebolla, pimentón y zanahoria por un par de minutos.

Luego añadí el pollo y un poco de agua, mezcle todo.

Por último sazone el guiso con sal, adobo y añadí un poco de aliño para el color, deje cocinar durante unos 15 minutos a fuego medio hasta que se ablandó la zanahoria y se consumió el líquido.

Finally season the stew with salt, marinade and add a little seasoning for color, let it cook for about 15 minutes over medium heat until the carrots are tender and the liquid is consumed.

En un recipiente añadí la harina de avena y la sal.

Empecé a mezclar todos los ingredientes con las manos y agregrando el resto del agua hasta obtener una masa.

Sobre una bolsa de plástico agregué aceite tomé una bolita de masa de avena y aplaste con mis dedos dando una forma redondeada coloqué el relleno en la mitad, selle con la parte que no posee relleno y sus extremos los aplaste con mis dedos obteniendo una empanada con forma de media luna.

On a plastic bag I added oil, took a ball of oat dough and flattened it with my fingers giving it a rounded shape, placed the filling in the middle, sealed it with the part that has no filling and flattened the ends with my fingers obtaining a half-moon shaped pie.

Una vez que realicé las empanadas, llevé en una bandeja al horno eléctrico durante 30 minutos aproximadamente.

Once I made the empanadas, I put them on a tray in the electric oven for approximately 30 minutes.


Una vez cocidas las empanadas de avena observen como quedaron crujientes por fuera con un relleno exquisito por dentro, son diferentes a las tradicionales pero son igual de especiales y deliciosas.

Once the oatmeal empanadas are cooked, notice how they are crunchy on the outside with an exquisite filling on the inside, they are different from the traditional ones but they are just as special and delicious.
