Bulgur salad with cherry tomatoes, green beans and mozzarella. 💕💕(ENG/ESP)

Happy Saturday and happy weekend to everyone. Today my husband and I had a very productive morning, we went shopping, got the pellets and treated ourselves to a nice trip to a park that we hadn't visited in a long time and a pizza for lunch out.

For this evening since yesterday I was expecting a busy day today I cooked a dish that is excellent both hot and cold and lasts two days in the fridge.

A Bulgur salad. It's not easy to find bulgur in my area, unfortunately because I love it, it's light and adapts to many dishes. For this recipe you need:

  • 90 grams of bulgur
  • 1 mozzarella
  • 60 grams of cherry tomatoes
  • 50 grams of green beans
  • 6 tablespoons of oil
  • 3 tablespoons of fine salt

First we prepare our ingredients, clean the tomatoes well and remove the stems then cut them into thin slices.

Hoy mi esposo y yo tuvimos una mañana muy productiva, hicimos las compras, conseguimos unos pellets y nos regalamos un lindo paseo a un parque que no habíamos visitado en mucho tiempo y una pizza para almorzar afuera. Para esta noche, que ayer esperaba que estuviera ocupado, preparé un plato excelente tanto frío como caliente y que aguanta dos días en el frigorífico. Una ensalada de bulgur.

No es fácil encontrar bulgur en mi zona, lamentablemente porque me encanta, es ligero y combina con muchos platos.

Para esta receta necesitarás:

  • 90 gramos de bulgur
  • 1 muzzarella
  • 60 gramos de tomates cherry
  • 50 gramos de judías verdes
  • 6 cucharadas de aceite
  • 3 cucharadas de sal fina

Primero preparamos nuestros ingredientes, limpiamos bien los tomates y les quitamos los tallos para luego cortarlos en rodajas finas.

Then we open and drain the mozzarella and cut it into thin slices, we also drain the green beans. We prepare a pan with two tablespoons of oil and cook the green beans for about ten minutes, stirring often. Then we prepare a pot with water and salt, when the water boils we add the bulgur and cook for seven minutes, stirring.

Then we drain it and add it to the pan with the green beans, cooking it for two minutes, mixing with the green beans so it will be crispier, finally we add the tomatoes and mozzarella and season with the remaining oil, mixing everything together, an excellent dish both hot and cold, today I had a snack with it and tonight we will have dinner with it.

Luego abrimos y escurrimos la mozzarella y también la cortamos en rodajas finas, escurrimos también las judías verdes. Prepara una sartén con dos cucharadas de aceite y cocina las judías verdes durante unos diez minutos, revolviendo con frecuencia.

Luego preparamos una cacerola con agua y sal, cuando el agua hierva añadimos el bulgur y cocinamos durante siete minutos, revolviendo. Luego escúrrelo y agrégalo a la sartén con las judías verdes, cocínalo por dos minutos, mezclándolo con las judías verdes para que quede más crujiente, finalmente agrega los tomates y la mozzarella y sazona con el resto del aceite, mezclando todo, un excelente plato tanto frío como caliente, hoy me lo tomé como merienda y esta noche cenaremos con él.
