It’s been a while since I tried a new recipe. I am desperate for something new as I’ve used the same old recipe this past month and because of this, I haven’t been enjoying what I cook and haven’t been looking forward to eating my own food as much as I used to.
Today, I can no longer tolerate eating the same food again and decided to try a new recipe. I found out about Moroccan Tortilla which is essentially a potato omelette and I must say that it’s a simple, delicious and quick dish to make!
Perfect for those who are time poor or… lazy. Hey, I’m not judging 😜
I had it with rice, Tofu Sinigang and Lao Gan Ma for extra spice 🔥 It was a fusion of Filipino, Chinese and Moroccan flavours. My tastebuds were extremely happy and my stomach was full 😍
A super short recipe
I'm one of those people that looks at a recipe but don't really follow it 😅 Such a rebel, I know! I usually eyeball the amount I need so this is just loose documentation of what I did. If you follow my recipe and it didn't work - you should have expected that oops 🤣
The following makes two large omelettes.
Step | Ingredient | Action |
---|---|---|
1 | Six small to medium-sized potatoes | Dice them up and boil until soft |
2 | One medium-sized onion | Dice them up and stir fry in oil until fragrant |
3 | Six eggs | Mix until blended |
4 | Boiled potatoes (step 1), stir-fried onion (step 2), mixed eggs (step 3) | Mix together in a bowl |
5 | Salt & pepper, Italian herbs, smoked paprika | Season the batter in step 4 |
6 | Oil | Fry the batter and flip the omelette |
