Bald clams are one of the most popular seafood. Then, why is it called bald? Medan residents used to call it bald clams. The name is an adapted name for the hairless shell of the clam. Yes, although in some areas the names will be different.

Lately, there are many culinary delights that serve seafood cooked with Padang sauce seasonings. Well, it turns out that not only seasonal hits, this Padang sauce clam is also used for breaking the fast menu.

For the iftar menu, you can also make it yourself at home, you don't need to buy it all the time, right? The following is a practical recipe for breaking the bald shellfish in Padang sauce.

1. How to choose shells

When buying clams, make sure you choose fresh shells. The characteristics of fresh shellfish are no foul odor, no mucus, and the shell is still tightly closed (not open). Or, once the clams have been removed from their shells, they should feel chewy to the touch.

Clean the clams by soaking them in salt water. The salt from the salt will open the pores of the shells, so that the dirt on the shells will come out.

If you don't want to cook it right away or want to cook it again next time, store the clean clams in a tightly closed container or jar, then place them in the freezer. And generally clams are cooked by steaming. If you want to steam clams, just steam them for 30 minutes.

2. The ingredients needed to make the sauce

The main ingredient:

1 kg bare shells wash clean
8 bay leaves
1 stalk lemongrass crushed
1 segment of crushed ginger
Enough water

Sauce ingredients:

1 chopped onion
1 tablespoon oyster sauce
2 tbsp chili sauce
1 tablespoon powdered mushroom broth
1 tsp sugar
Salt according to taste
2 bay leaves
300 ml of water
1 tablespoon cornstarch mix with 2 tablespoons water
Oil for sauteing
2 chopped cilantro (optional)

Ground spices:

5 cloves of garlic
6 pieces of boiled curly red chilies (you can add red bird's eye chilies according to taste)
2 boiled tomatoes
1 segment of ginger

3.How to make bare clams in Padang sauce

Boil water with 8 bay leaves, lemongrass and ginger then add the clams and boil for 15-20 minutes until the shells are open and cooked. Then, remove and wash thoroughly and open the clamshell which is still closed.

While waiting, you can saute the ground spices until fragrant with the bay leaves. Add the onions and saute until wilted. Then, add the oyster sauce, chili sauce, powdered mushroom broth and sugar and stir well. Pour the water and then cook until it boils.

When it's boiling, add the bald clams. Cook until the spices are absorbed. Check the taste, if necessary, add salt. Pour half the cornstarch solution then mix well then pour the rest again until the sauce is thick. Remove and sprinkle with chopped cilantro.
