The most international Portuguese Pastry!!

Yesterday was my intro to the Hive Community and the reception I had was beyond amazing! You really know how to make a person feel welcomed! Thank you so much for that! In case you’ve missed it here it is Intro to Hive. On another note, I’ve shared this post on another community but it makes sense to add it here, because it’s delicious food, can you tell me in the comments if that is ok? 😊

Today, since I’ve mentioned I’m from Portugal, I'm bringing to you our most emblematic Portuguese pastry, something that is well known all over the world, the Pastel de Nata! I’m sure it’s something we can enjoy doing with your extra free time if you’re quarantined. Pastel de Nata is a pastry made with puff pastry and custard like filling.

The custard is made with milk, egg yolks, flour, sugar, one lemon peel and one cinnamon stick. The cinnamon stick and the lemon peel are optional but I make mine with it since I really enjoy the flavor. Nata is our cream translation but there is no cream involved.

This little sugary wonder has a lot of history being it, in 1837, in Belém, Lisbon, the monks decided to make some extra money by making and selling these pastries. When the monastery closed the baker sold the recipe to a local business man and that original recipe is still well kept in the hands of his descendents! The pastries made in the family bakery with the original recipe are the only ones that can be called Pastéis de Belém. All others are Pastéis de Nata since they are attempting to replicate the original recipe. The recipe for Pastéis de Belém is patented, secret and all bakers that go to work there are under strict confidentiality contracts.

This shows the importance of the recipe, usually the bakery has clients waiting for the Pastéis de Belém. The waiting line is so long at times, especially during tourist visits, that the bakery has their clients waiting outside on the street. That's why people at home and other bakeries started to try and replicate the recipe.

It was a well accomplished try because the Pastéis de Nata are also delicious! Today I made one to show you guys 😉 Usually they are small individual pastries but it's time consuming to make the small ones so I make one big pastry and we cut slices to eat it. I can assure you that all the deliciousness stays there, no matter if it is an individual pastry or a big one to eat in slices.

So the process is the following, you heat part of the milk (150ml) with the lemon peels and the cinnamon stick. The rest of the milk (100ml) is to mix with the flour. When the milk with the lemon peels and the cinnamon stick boils you add the mix with flour and milk to it and keep stirring. It will be a thick cream in a while. Set it aside for now after removing the cinnamon stick and lemon peels.

In another pot add water and sugar and let it boil. After boiling stir for another 4 or 5 minutes. Let it cool for a bit and add it to the cream you have. Mix well until everything is homogeneous. To that mix add 4 egg yolks and stir until everything is a slightly liquid custard. Don't worry, the time in the oven will take it thick and creamy again!

So there you have it, the filling is done. Now on a pyrex cake pan you just need to put the puff pastry, add the filling and put it in the oven. The oven was preheated at 220ºC and it will bake for 15 minutes.

After taking out of the oven just let it cool for a few minutes and it's ready to be eaten. Enjoy it because it's delicious!

250ml Milk
1 Lemon for peels
1 Cinnamon stick
75ml Water
150grs Sugar
30grs Flour
4 Egg yolks
1 Round puff pastry

I love pastel de natas! Had my first when I attended @steemfest in Lisbon back in 2016. You inspired me to maybe try to make my own. They are hard to find where I live.
