OMG!!! I HAVE A CONFESSION…

I know it's not right, I know it's not healthy and I know I have to strike a balance. But how can a person get so hooked that you just can’t even get enough? Okay, Okay! I should take it easy, right? LOL! But I just can’t!

Of course, I am talking about these fried chips and sauced chicken. It’s my new obsession and I honestly can’t get enough of it. Hell Yes! Sure tastes that Good…

Recipe
Fine. Come closer, let me whisper this into your ears. You need:

  1. Irish Potatoes
  2. Chicken Laps
  3. Groundnut oil
  4. Salt
  5. Blended Fresh Pepper
  6. Blended Fresh Tomatoes
  7. 1 Ball of Raw Tomato
  8. Garlic
  9. Ginger
  10. Lettuce
  11. Seasoning Spice (of your choice)
  12. Carrot
  13. Green Pepper
  14. Cabbage
  15. Cucumber
  16. Ketchup

Preparation Technique

  • For the Irish Potatoes
  1. Chop the Irish potatoes into the desired shape and size. Wash thoroughly in a clean bowl of water.
  2. Put in a pot and boil slightly for 10mins. Yes! BOIL with a pinch of salt until it is parboiled (partly boiled).
  3. Sieve the water from the parboiled potato and fry using either a deep fryer or fry pan with sufficient groundnut oil.
  • For the Sauced Chicken
  1. Wash the chicken properly, Steam with salt, diced onion, blended fresh pepper, diced garlic & ginger, and seasoning spice till chicken is properly cooked and soft enough for consumption
  2. Put a small amount of groundnut oil in a frying pan, add a handful of diced onion to it and fry for 1min.
  3. Add the chicken stock (the water from the steamed chicken) to this mix, followed by the blended fresh tomatoes, and stir. Cover and allow to steam.
  4. After 20mins, check to make sure the taste is balanced, then add the diced carrot and green pepper. Stir and cover to steam. Leave for 5mins.
  5. Add your steamed chicken part into the sauce and stir on low heat for 1min.
  6. Garnish with stripes of carrot & cabbage, lettuce, cucumber, and tomatoes. Add Ketchup on the side.
  7. Food is served!

My Final Thoughts
The secret here is the chips taste baked due to the parboiling before frying. The sauce also tastes like it’s from another world because of the chicken stock used as its base.
