A delicious twist with plantain and egg sauce

Here in Africa we are all used to the same recipes when it comes to making certain snacks, but then I love trying different recipes to give my snacks different tastes.

So today I will be making plantain and egg sauce pie; the usual recipe for pie is what most people go for, but then I want to make mine different and unique as well.

Ingredients are:

200g of flour

300ml of groundnut oil

2 pieces of eggs

2 pieces of plantain

10 pieces of green pea

5 pieces of spring onion

10 pieces of basil leaves

Half a teaspoon of salt

1 piece of seasoning cube

Procedure

I started the process by making a dough with the flour. I poured the flour in a clean bowl and added water gradually into the flour while making the dough until the water was enough.

I also added one full tablespoon of groundnut oil into the mixture and then mixed again until it became smooth.

The next thing I did was cut the plantain into smaller pieces.

Followed by the spring onion

Then the green pea

Lastly, the basil leaves

I put a smaller frying pan on the burner, then poured a small quantity of the groundnut oil into it and allowed it to get hot a little bit.

I poured the green pea first, then allowed it to fry for one second.

I added the sliced plantain next and stirred.

The next thing I added was the spring onion.

Then I added half a seasoning cube and a quarter teaspoon of salt to taste.

Then I added the basil leaves and stirred so that the seasoning could influence the sauce.

I proceed by breaking the eggs into a clean bowl.

Then I added the remaining quarter teaspoon of salt and then whisked it thoroughly.

The sauce had fried a bit, so I poured the eggs into the sauce and stirred it, then I allowed it to fry.

I sprinkled some flour on the tray, cut a small quantity of the dough, and placed it on the tray, then made use of a rolling pin to spread it out a little.

The sauce had fried, so I made use of a teaspoon to take a small quantity and poured it in the middle of the spread dough. I applied oil at the top of the dough and then closed it.

I made use of a fork to press the tip round to avoid opening inside the oil while frying.

The same process was applied to the rest of the dough and sauce.

I placed a big frying pan on the burner, then poured oil and placed the pie inside.

I didn't want it to get brown quickly; that was why I didn't allow the oil to get hot.

The same process was applied to the rest.

Five minutes later I turned them to the other side and then allowed it to fry for another five minutes.

I packed them out when they had turned golden brown.
