How are you all Hope everybody is well. Today I came back to share a new recipe.
Let's see, today I am sharing my mother's favorite recipe, a Bengali winter special dessert recipe - 'Dudh Puli'
I learned to make this dish from my mother. When Mom was making this dish, I would sit next to her and help her.
I missed my mother a lot while cooking this recipe
However,
Dudh Puli is a famous Bengali milk based payesh / khir / pudi prepared slowly cooked milk (also known as rice flour dumplings).
Materials: -
★ Grated Coconut (I used 2 medium sized coconuts)
Milk - 2 and 1/2 liters
★ Bay leaves
★ 5 cardamom
★ Date date molasses - minimum 1 kg
rm water
Rice flour - 1 kg
★ .Salt- 1 / 2tsp
First stage
- On the gas, add the coconut (in the grating process I used one and a half medium sized coconuts) and slowly until the moisture is reduced.
- Now I have taken three cups of milk. I add some molasses to the milk. However, the color becomes light brown
- Add 600 grams of date molasses and mix until dissolved. Cook over low heat.
- One bay leaf, 5 cardamoms. Continue steering to avoid burns.
- Once the mixture starts to leave the edge of the pan or pan.
- Transfer the mixture to a plate and set it aside. ।
On gas. Place in a pan. Give 900 grams of rice flour.।
- Make soft dough by adding hot water little by little. This time half a teaspoon of salt.
- Transfer the flour to a plate.
Add 5 tablespoons rice flour, mix with flour.
- After making the dough, wipe it with a damp cloth.

- Take a ball from the flour and flatten it using the palms and fingers shown in the picture.।
Make a little bowl or little hat using your finger.
Leave one spoon empty to give to the woman in the middle
And the seal and pulley from both sides will be a shape of the crescent.
- You can design the face part of this pool (the place you sealed).
Make all the pulleys by following the procedure mentioned.
Do as shown in the picture.
Stage III
Take 2 liters of cow's milk and start boiling.
After 2.3 minutes add 400 grams of date palm molasses. Mix again.
Add the pulleys at once and cook on low heat for about 15 minutes to reduce moisture.
- By then the milk will be thick.
Turn off the flame when the desired continuity is reached.
Test using finger.
If it feels slippery after touching Puli's body, it means it is ready
Start after at least 8 hours of cooking to get the best of the taste.
During boiling you can use cardamom or bay leaves again for better taste.
