The main meal of Indian is rice and curry. It is the usual dish for any occasion or in the home meal. I chose stir-fried noodle as my favourite food because this is something that we get away with rice. Noodle has been the special meal for dinner and breakfast for me since my childhood.
The other reason is that making the noodle is very easy. This stir-fried noodle is not the instant type noodle like Maggi but still, it takes less time than the usual rice and curry. Also the unique taste of Indian spice makes this noodle my favourite food.
Since this is not the instant type, this noodle can be consider as a healthy meal as well. I have not added any artificial flavours to the recipe. All the ingredients are natural spices. I will show you the steps that I took to cook this Sri Lankan style stir-fry noodles.
Ingredients:
π Packet of Noodles
π Grated Carrot
π Finely Slice Leeks
π Egg 01
π Tomato 01
π Green Chilies 03
π Medium sized onions 02
π Cloves of garlic 02
π Black pepper 02 tsp
π Some curry leaves
π Some pandan leaves
π Chili flakes as per your taste
π Salt as per your taste
π Vegetable oil
Take the Noodle packet and boil it in the water for about 05mins. Add some salt to the water in the process. When the noodle boiled strained Noodles. Take other ingredients and slice them all for the next step (Onion, Tomato, Green chili, Curry leaves, Carrot, Leeks) Make a Garlic & Ginger paste by chopping them. Boiled the eggs as well.
Heat the saucepan over medium heat for a minute and then add some oils to the pan. Once oil heated add garlic & ginger paste and curry leaves. Mix them until the paste become golden amber
Now add sliced onion and green chili
Then add pandan leaves and tomato
Now add grated carrot and salt, chili flakes & pepper as per your taste
Then add leaks and egg. Mix everything well.
As a final step add noodles to the mixture
Done.. This is the Indian style stir-fry noodles. We can add chicken curry or egg curry to accompany.
