"Palak Paneer" - Palak means Spinach and Paneer means Cottage Cheese. So this recipe is of Cottage Cheese simmered in creamy and silky spinach gravy.
This recipe is very healthy and is a balance food in itself. People from North India cherish over palak paneer and enjoy it with roti, paratha, ghee/jeera rice, naan or plain rice.

At first blanch the spinach leaves for 2 mins and strain it. After that immerse it in cold water to stop the cooking further and help it retain the lovely green colour. Grab your mixer and blend the spinach into a creamy textured gravy. Keep it aside.
These are all my ingredients guarded by the star of my life.
Heat a kadhai or pan, add 2 tbsp refined oil and 10 gms of butter. Add the bay leaf and red chilli to temper the oil, then add crushed garlic (crushed ones release more flavor than the chopped ones), saute for 10 secs, add onions wait to turn transparent. Add on the chopped tomato along with some turmeric and salt. Wait till the tomatoes gets mushy to add the paneer cubes and coat them with the masala very carefully, so that it doesn't break. and roast it so 2 mins in low flame.
Pour the spinach paste and mixed it properly and let it simmer for 5 mins.
Just before putting the heat off add butter to give that silkiness.
