As a Sri Lankan, we are currently very busy because children are having their April vacation and we are also celebrating the Sinhala and Hindu Tamil New Year. Despite the festivities, I haven't forgotten about all of my Hive blog chain friends.
While many traditional sweets are being made for the new year, I have decided to do something different and make chicken nuggets for them. This way, they can enjoy a savory treat to balance out the sweetness of the traditional sweets.
Ingredients
🔪 500g boneless chicken
🔪 5 slices of bread
🔪 5 pods of garlic
🔪 1 green chilly
🔪 2 tsp black pepper powder
🔪 1 egg
🔪 1 cup bread crumbs
🔪 oil for deep frying
Instructions:
Cut boneless chicken into small bite-sized pieces and put them in a grinder. Grind well.
Remove the crust of bread and cut it into small pieces. Grind it as well.
In a mixing bowl, combine the ground bread, ground chicken, green chilli, pepper powder, and salt. Mix well and set aside.
In a separate bowl, beat one egg and set it aside.
Take some cheese wedges and stuff them with the chicken mixture, shaping them into balls. Spread out any excess mixture in a tray and cut into squares.
Dip each chicken ball or slice first into the beaten egg, and then into the bread crumb mixture to coat evenly.

Heat oil in a pan over medium heat.
Once the oil is hot, add the breaded chicken nuggets to the pan and fry until they turn golden brown and are cooked through, turning occasionally.
Remove the nuggets from the pan and place them on paper towels to drain excess oil.
Serve hot with your favorite dipping sauce.
