I recently had such a fun sushi night with friends that I got inspired to make this creative dish more often. As a raw vegan, I usually use jicama rice as the filling along with many colourful veggies but the options are wide and colourful.
This latest creation was made with jicama rice and a simple filling of tomato, spinach, cilantro and cucumber. The sauce is what made the sauce extra exciting - my homemade Asian Sweet-Sour dipping sauce. The recipe is from my ebook Everyday Sauces.

Last time I added some celery and arugula as well which gave it such a nice salty and spicy twist.
