Cómo las indicaciones médicas son comer sin carbohidratos, sin azúcar, solo algo de aceite de oliva, hoy, pude preparar mi almuerzo, para ello utilize:

- 1 berenjena grande, lavada y picada en rodajas 🍆 1 large eggplant, washed and sliced

- 3 dientes de ajo picaditos 🍆 3 minced garlic cloves
- Un cuarto de cebolla morada, un cuarto de cebolla blanca, lavadas y picadas en cuadritos 🍆 One quarter red onion, one quarter white onion, washed and diced
- Dos rueditas de queso requesón sin lactosa 🍆 Two rounds of lactose-free cottage cheese
- Una ramita de celery picadita 🍆 A sprig of chopped celery
- Pollo sancochado 🍆 Parboiled chicken
Preparación 🍆 Preparation:
Primero tener el pollo sancochado con un pedacito de cebolla y una ramita de celery,

una vez sancochado, desmechar muy bien, yo la puse con el mortero, le puse una pizca de orégano seco en polvo.

las rebanadas de berenjena las coloque en una tortera y las puse en capas, coloque un poco de aceite de oliva, meti al horno por diez minutos

En una sartén con una cda de aceite de oliva sofreír el pollo y le fui incorporando el resto de los ingredientes ya picaditos, revolvi y dejé sofreír todo muy bien, apagar hornilla

A las berenjenas sacadas del horno les coloque dos cucharadas de requesón y trate de distribuir en las berenjenas,

luego verti el pollo y distribuí en todas las berenjenas
then I poured the chicken and distributed in all the eggplants
rocíe con otra cucharada más de aceite de oliva y poco a poco intenté enrollar las berenjenas, metí al horno por 15 minutos hasta dorar, una vez listo,
