Yes You Can Eat Flowers: Delicious Three Cornered Garlic ๐Ÿง„ ๐ŸŒฟ

Every year in Spring, I walk past the white nodding flowers of three cornered garlic, sometimes called three cornered leek, onion or just three cornered allium. I always pick daily bunches, suprised no one is fighting me for it.

It's funny how people cry about the cost of living and how expensive food is and don't make effort to find food around them, but I'm glad they don't, otherwise my stash of garlicky greens and flowers would be gone.

All parts of the plant can be used, and are highly nutritious. I'm sure that @anttn will be interested in this one as he learns about calendula and other flowers from the wild we can forage and eat!

This meal is super healthy comfort food for me, using lentils and brown rice as a base, kinda like a risotto or porridge. I have to say I love my rice cooker for this - I put a cup of rice and half a cup of lentils, and 3 cups of water, as well as some vegetable stock and perhaps more water if it starts to get too thick - you might have to stir it a bit toward the end.

Meanwhile, I simply saute some vegetables in olive oil. Garden greens and wild greens are perfect - here, I used nettle, broad leafed plantain,silverbeet, and some sprouting ๐Ÿฅฆ - and of course, a generous handful of chopped three cornered allium leaves!!

Now if you're vegan, this is all you need. Add some seasoning to taste - I give a good squeeze of lemon, perhaps some smoked paprika, a splash of tamari or even some pickles like jalapeno, capers or, like I do, preserved lemons, which adds a delightfully salty, lemony kick.

However, I love to add half a block of chopped halloumi (small cubes). This meal serves two, so I find half a block economical but still tasty.

I saute a little more so the halloumi softens. Remember it's salty so make sure you keep that in mind when adding your seasoning.

I then scoop the brown rice and lentil risotto into a bowl, top with the sauteed veggies and halloumi - and then, the final smattering of edible flowers, a gorgeous garlicky taste to finish. I also like to add a spoonfull of toasted sunflower seeds, pepitas and linseeds, but black sesame or black onion seeds are also great additions, adding another texture and layer of nutrition.

Delicious!

Learned something new today.
I had no idea that they were edible flowers. I thought they were only used for beautification but now I know that they can beautify our stomachs too.

Yes, make sure you check to see if it's the right one. They do have a distinctive garlicky smell.

What a beautiful dish! the picture with the bowl and flowers looking out window is perfect ๐Ÿคฉ I don't eat three cornered garlic and I don't think it grows this far north but not sure on that. I like foraged mushrooms and ramps but my favorite is berries. We have lots of wild raspberries/blackberries and I love grabbing a handful while out hiking ๐Ÿ˜‹

I am always SO amazed at the berries that are so abundant in the wild there!! I'd die and be in foraging heaven to pick mushrooms AND berries!!

Actually, this is something different, something new for me. Willing to experiment. But I think these flowers are not in my country.

That looks so yummy! I have never eaten three cornered garlic, but I sure do love to forage things, one of my favorites is throwing a handful of baby dandelion greens into whatever soup or salad I am eating, I love that little hint of bitterness! And I absolutely adore lentils, your dish looks so tasty and nourishing, the layers and complexity of flavor must have been divine!

Beautiful those vegetables look like a work of art.

Had never heard of or seen 3 cornered garlic before. Right now my garlic chives are flowering. I use nasturtiums, calendula, borage, hearts ease, violets, roses, and others I can't think of.

Mmmmh, this just looks perfect ... and delicious ! Winter here will be even harder (or sweet ?) waiting for those flowers !!
