Today I want to share with you a recipe that my family likes very much, it is very tasty and is also healthy due to its nutritional value.
Vegetables are very inexpensive and are the perfect companion for your food.
- Berenjenas
- Calabacin
- Zanahorias
- Cebolla
- Aji
- Pimenton
- Ajo
- Aceite ( puede ser aceite de oliva o el que tengas en casa)
- Vinagre ( tambien puedes usar limon si no tienes vinagre)
- Sal
Very well I show you the ingredients:
- Eggplants
- Zucchini
- Carrots
- Onion
- Chili pepper
- Peppers
- Garlic
- Oil (it can be olive oil or whatever you have at home)
- Vinegar (you can also use lemon if you don't have vinegar)
- Salt
PREPARATION:
Cut the vegetables and seasonings into not so thin strips.
In a non-stick pan we are roasting our vegetables.
If we see it necessary we can add a little water so that they cook well, more than anything else it may be necessary with the carrot for it is a little harder its consistency.
Having all our roasted vegetables, we combine them in a bowl and mix with the vinegar and oil. I use equal amounts of this about 3 tablespoons of each and add salt to taste.
This is how easy we have our vegetables in the vinaigrette. Perfect for a snack with bread or cookies.
