This dish is most often associated with Morocco,today you can buy it in stores with household goods.
It is a clay fired vessel that, before the first use, soak in water, lubricate it with oil and put it in the oven for a moment at bout 150 degrees.
I got my tagine from my friend from Moroccofrom the city of Agadir, he bought it at the local market.
Everyone has their own secret of making the best tagine. The classic combination is chicken, green olives and pickled lemon.
My First Tajine will be with :
chicken breasts
3 onions
4 potatoes
2 large carrots
1 zucchini
4 whole tomatos chopped
handful of peas and raisins
a few dried dates
chilli pepper
homemade pickled lemon
Marinate:
olive oil
cinnamon
turmeric
cumin
dried coriande
dried ginger
black pepper and salt
Chicken breast and vegetables cut into pieces
I put Tajine over the fire and put some oil, plant onion, then added pieces of chicken, marinate and vegetables. I was putting into the shape of a pyramid.
Put the lid on.Slow cooking the food over a long period of time with a bunch of spices. So I left this cooking slowly for around an hour and a half.
Tajine are served straight to the table and people use their hands and bread to dip in and share the meal. I served it with a baguette and grilled tortilla.
This dish is an amazing wealth of aromas and minimal preparations. Tajine is not only tasty, but also nutritious, filling and healthy. I recommend it to everyone .
