I am relatively new to cooking. I started cooking on a regular basis when I left my job two years ago. The first year has been mostly disasters in the kitchen, more like hit or miss when it comes to actually preparing a perfect meal for my family. The second year, I can proudly say I have learned a lot. And I have been more comfortable moving around the kitchen. To the point that I don't want anyone else invading this space. I have marked it as my teritorry.
I can honestly say that I have been a bit more experimental when it comes to cooking. I dared myself in preparing food I haven't tried before. My husband has been supportive and even gives me ideas (more like challenges) for new recipes. I tried cooking Egg Curry before and it turned out fine. For today, I had another experiment. I can't say if it's afritada, menudo, or mechado. This still confuses me.
So I'm calling this Egg in Tomato Sauce instead. This is purely a product of my imagination. Two months in community quarantine really does things to a person. Let me share to you my second eggsperiment.
Ingredients:
Hard boiled eggs (6pcs)
Carrots (cubed)
Potatoes (cubed)
Bell pepper (diced)
Onions (minced)
Garlic (minced)
Tomato Sauce (2 cups)
About a cup of water
Olive oil
Salt
Pepper
Procedure:
- Boil eggs for 15 minutes. Let cool, then peel. Cut into 4 slices (or into halves, totally up to you.) Set aside.
- In a pan, saute garlic, onions and bell pepper.
- Add the potatoes and carrots. Stir fry.
- Add water. Just enough so that the potatoes won't stick to the pan.
- Add tomato sauce. Let simmer for a couple of minutes. Sprinkle salt and pepper to taste.
- Finally, add the sliced hard boiled eggs. Mix gently not to break the eggs. Add some water if it becomes too thick. Cover for less than a minute.
And there you have it. Easy peasey. Serve with rice. Or not. I like the outcome of this playful experiment. A friend suggested I cook Egg Sarciado next time. Maybe I'll give that a go. How about you? Do you have any kitchen eggsperiments too?
