Kutsinta is one of the most popular Filipino desserts or meryenda!
Its a steamed rice cakes made with flour, tapioca flour, and brown sugar. Soft, chewy and topped with grated coconut, cheese or yema spread.
I've been into many trials and errors cooking this dish.
You should come up with a soft chewy texture. Mine just soft . Ha ha!
Then finally as I browse though google I found a recipe at kawalingpinoy.com and now I perfected it.
Ingredients are:
*1 1/2 cups flour
*1/2 cup tapioca flour
*1 1/2 cups dark brown sugar
*3 cups water
*1 tablespoon of yellow food color
*1 tablespoon lye water
Procedure
1.Combine flour, tapioca flour, sugar, and water. Stir well until all are dissolved and mixture is smooth.
2.Add the orange food coloring until you have your desired color.
Add lye water and stir.
3.Fill molds to about 3/4 full.
4.Add water to the steamer and bring to simmer over medium heat.
5.Steam for about 40 to 45 minutes or until mixture is set. Remove from heat and allow to cool.
Gently remove from molds and serve with cheese or grated coconut on top.

I'm a big fan of kuchinta, tried it for the 1st time years ago when in Philippines and has been in my diet ever since. My wife being filipina makes a great one as I presume everyone from Philippines does.
