Cucumber mustard curry Sri Lankan Style

My dear Hive friends,
Today I am going to prepare for you a cucumber mustard curry Sri Lankan Style.

Ingredients
250 gr cucumber
1/4 B.Onion chopped
1 green chilli chopped
10 nos curry leaves
3 pieces of pandon leaves
1/2 tea spoon curry powder
1/2 tea spoon mustard cream
1/2 tea spoon salt
Dash of tumaric
150 ml thin coconut milk
150 ml thick coconut milk

Method
First cut the top of the cucumber with the stem and rub it to take out bitterness as shown in the picture.

Remove the skin and open up the cucumber. remove the middle part with the seeds and cut in slices as shown in the picture and put it to a pan.

Now add B.Onion, green chillies, curry leaves and pandon leaves.

Then add curry powder, mustard cream, dash of tumeric and salt.

Add thin coconut milk and mix it well and keep it on the fire.

When the gravy is redcued Add thick coconut milk and keep it to simmer.

Now the curry is ready and take it down and put it to a curry bowl.

Dear friends,
This is a mild curry and the preparation is very easy.
Cucumber has vitamin K , A, C and beta - Carotene.
It helps skin health and prevent dehydration. Also helps to fight to cancer and diabetes.
