Hehehe.. yes, I have kept this chicken since 3 months ago, initially there were 3 chicks that I kept but unfortunately 2 of them died for some reason I also don't understand, so there is only one left so I took the initiative to cut it this afternoon, as a lunch menu for our family, without me realizing it, after being cut the chicken was really very small for some reason even though I routinely feed it every day, but oh well, it's okay as long as the chicken can be eaten by our family for just one lunch this time.
And I just finished catching the chicken, it wasn't difficult to catch it because the chicken was already in its cage, it rarely wanted to come out of the cage maybe because it was used to being locked up, after I caught it I immediately took it to the market to slaughter it, the market wasn't that far from my house.
After the chicken is cut, I will immediately process the chicken by frying it, and dipping it in chili paste, as usual.
Very simple cooking in a simple home too.I will immediately prepare the ingredients,
Ginger the size of 1 thumb
Garlic 3 cloves
Puree all the spices until completely smooth using a blender, you can also use a pestle and mortar.
Wash and clean the chicken first until clean, then marinate the chicken with salt and lime, then coat it with the ground spices.
Simmer the chicken until cooked for about 30 minutes. There is no need to add water because the chicken will release water by itself.
While the chicken is being marinated, let's prepare the shrimp paste chili sauce.
1 large tomato
5 cloves of shallots
1 clove of garlic
Chili peppers to taste
Red chilies to taste
2 green chilies
Fry all the ingredients briefly until they are wilted, then puree them using a pestle and mortar. Don't forget to add a little salt and mushroom stock. I also added a little lime.
Pour hot oil over the chili sauce to make it even tastier
After the chicken is marinated, the next step is to fry the chicken in hot oil.
Chicken and chili paste are ready to be served. Serve with fresh vegetables such as lettuce, cucumber and tomato.
My fried chicken with shrimp paste chili sauce is ready to be enjoyed, the chicken is very crispy and very fresh, maybe because the chicken I raise myself at home and I feed it rice every day, just like us, with the texture of the chili sauce which is so spicy it arouses my appetite when I eat the chicken, especially with the lettuce, cucumber and tomato vegetables dipped in the shrimp paste chili sauce.
