Hello everyone! I hope that you're having a good weather! It's a fine day here so I asked my buddy to help me with Antonia's project which is about traditionalusical instruments of Muslim Mindanao. It is part of our cultural heritage which was reflected in our history books. With that, one of their projects was to make a replica or miniator of it in which I helped Antonia with a bamboo instrument using bamboo strips.
Elvie, our long time buddy, (Antonia's nanny since nursery) helped cut the bamboo strips while her daughter cleared the jackfruit leaves and made a smoke fire to eliminate the pests that may cause destruction to the jackfruits when I noticed that the bigger one had black spots on the top cover. I decided to pluck it before the inner sop is infected because these little insects are hard to get rid of once they're there!
The best thing to do is to separate the rest by wrapping them with a sack until they're ripe.
This young jackfruit is best eaten with mongo beans and coconut milk! The ones that are semi ripe are good for salad with fresh Coco milk too.
Therefore, I only needed the following for this simple farm food:
• 1/4 kilo mongo beans
• Young jackfruit, chopped into small pieces.
• Spring Onion
• Bell peppers
• Lemon grass
• Ginger, minced
• Coconut milk
• Salt and seasoning to taste

In peeling this, a little stick is stuck on the middle top part for you to hold while chopping of the thick cover. Avoid the tar because it could harm your skin. Then chop it until they're fine but do not include the center part. You may scrape it until it reaches the softer part. Eliminate the center part of the jackfruit. By the way, sorry guys,I wasn't able to take photo because it was already thrown away! Lol!
Anyways, here's what you should do. Boil it first with water then rinse. This will eliminate the dark colouring of the liquid.
Meanwhile, wash the mongo beans and boil it in a separate casserole.
Once the beans are tender, you may add the boiled young jackfruit along with spring onion, ginger, bell pepper and lemon grass.
Next, squeeze the coconut sap with 2 cups of water. You will add it once the mongo and chopped jackfruit is fully cooked. Though this time, I segregated the first cup of squeezed Coco milk for other purpose. Anyways, the taste is still the same but it's creamier if you mix the first squeezed Coco milk for finale.:)
That's the finished product! It's good that there's still a bowl left because I forgot to take a picture. Lol!
I ate with them and we were excited while partaking this delicious food it was like an indoor picnic!
Lastly, do you know what I prepared with that 1 cup of pure coconut milk? I made a Puto Maya! It is made of Glutinous rice with Coconut Milk. Here's the recipe:
1 kilo Glutinous Rice
1/2 cup brown sugar
1 cup Coconut Milk
1/cup minced ginger
Procedure:
Cook the glutinous rice just like an ordinary rice.
Add the minced ginger for flavor enhancement.
Add 1/2 cup brown sugar
While the G. Rice is half cooked, gently mix the pure coconut milk until it is mixed all over then cover it. Covering it with banana leaf is better also but if there's none, it's still okay.
That's the cooked Puto Maya. It is good for snacks and a good pair for your morning brewed coffee!

Actually, I liked the base part in brownish color because it's a little burnt and crispy! Lol!
