My mum's cooking can be hit and miss. When you ask what is for dinner and she hasn't yet figured it out (or checked the back of the fridge) the response is usual "It's Yum Yum food tonight"
One of my Mum's more famous "Yum Yum" puddings is her cheese cake. We all know that cheese cake can be fiddly to make, but not this version.
- Grab a load of digestives and gingernuts (about 3 : 1 ratio) and smash them into crumbs.
- Melt butter and add to the crumb mix and stir thoroughly to coat all the crumbs
- Flatten the crumb mix into the bottom of a lined or greased tin
- Make up some Angels Delight mix and pour onto the crumb mix. We prefer Strawberry in our household, but feel free to use Vanilla or Chocolate to your own taste.
- Sit in the fridge for 15 mins and it's ready to cut into slices!!!
My Mum is currently in hospital so my own family made this recently to show that we were thinking of her. Thoroughly tasty, and a great tribute to a great Mum!
