I have just cooked one soup, the so-called empty fridge soup. π
It is a very simple dish and you don't have to be too clever. You look in the fridge at what's inside, pick out what's still edible, clean it and cook it.
What I found in the fridge:
- One red pepper
- One carrot
- One onion
- 3 cloves of garlic
- One piece of celeriac
- One piece of cabbage head
- 2 young onions
- 2 potatoes
- Leftover asparagus stalks (they are tough but can be cooked)
And dried spices - oregano, thyme, turmeric, curry, salt, and pepper

I spent most of my time cleaning and cutting everything into smaller pieces. As we will blend everything with a blender, in the end, it is not necessary to chop too finely.

Place all the chopped vegetables in a heated pot with one tablespoon of olive oil on the stove. Now, stir and fry for a couple of minutes. Add all the spices.

After a few minutes, pour water over the whole thing, or even better if you have some stock. Let it boil slowly on the lowest heat so that all the vegetables are cooked.

When the vegetables are cooked enough, just blend them well with a blender.

And that's it.
Just serve the thick soup. I usually add some crunchy bread balls on the side.
