One of my beloved suppers is beans and yam. I would likely eat it every day. However, we're not here to discuss beans. There was a day I wanted to have my cherished diner, yet my darling beans and yam was not accessible. I didn't need jollof rice. I didn't need swallow. The last plate that had sweet potato porridge looked sufficient, so I agreed to that.
As individual meals, which is beans and yam, they create a delight familiar to the Nigerian palette, but as a duo, they create a bomb.
This meal is super easy and full of nutrients. Beans is very high in protein while yam is a carbohydrate together with other ingredients gives a balanced diet
Normally, most people dislike having beans as their meal, particularly kids. Yet at the same time, it makes up the balance diet which we must include them in our daily life.
Ingredients for the Beans:
3 cups of Nigerian honey Beans
1 large onion (finely chop)
freshly blended tomatoes, peppers and onions.
Salt to taste
100ml or 2 serving spoons of red palm oil
2 Seasoning cube (maggi star or any other)
Garlic and ginger ( optional)
Curry powder and thyme(optional)
Instructions to process the honey beans.
I observed that there are various recipes in preparing this dish. Mine is quite different. The steps are as follows.
Wash the beans with clean water to remove dirt and any particles. Mostly its too maintain healthy hygiene.
Pour washed beans into sauce pan or pot and add 300ml of water and a pinch of salt for taste. Constantly check the bean if water has dried up or bean is soft enough for consumption.
Fry tomato or pepper sauce using palm oil or groundnut oil. Add onions, seasoning cubes, salt, ginger and garlic to taste but please be aware of the salt content because it will change the taste of the meal.
Pour out the beans onto the sauce and mix up. Steam for 5-10 minutes with low heat.
Serve and enjoy with chilled drinks if necessary.
Ingredients for the Yam:
1 small tuber of Puna yam
Salt to taste
Sugar to taste
Instructions to process the yam.
Peel and cut the Yam into medium-sized chunks and rinse a couple of times
Put the Yams inside a Pot, add pinch of salt, sugar and moderate amount of water just to the level of the Yams and let it cook for 15-30 minutes on medium to high heat. Above 30 minutes,the yam can become too soft.
Drain the water out after 30 minutes and serve hot to enjoy its heatness and taste.
