Hmmm... you've piqued my interest. Perhaps I'll try substituting zucchini in my own apple pie recipe, though I like my apple pie a bit on the sour side, so I may have to add some rhubarb as well. For now though, I'm fine with zucchini bread, zucchini pancakes, and zucchini slaw. BTW, for the absolute best pie crusts, IMO anyway, use lard.
