Craving for food is not big problem in India, especially when you are in the capital city of Delhi. Recently, while travelling in a train, one of my co passenger was saying that "there is no problem for food in Delhi as people can easily find many option on the street at reasonable cost." At least people can get over the food craving easily with quick snacks. I find many people avoiding the street food, but when you are falling short of food option, crave on the street food, eat it with joy and gratitude.
Street food is a good employment generator for many people in the big city. Selling food is self employed job on which many people are relying their livlihood. You will find many sellers selling differrnt eating items. They do not have any stalls or shops, they just carey their sacks from one point to another. Today, I found this snacks seller setting up his stall on a wooden stand under a metro train station.
So early at 9 o'clock the man is right on his business. At times when city people prefer to sleep, these guy well out on the street, or roads corner to sell their item. This one I will say is a bhel-puri which is crispy , spicy, tangy in taste. Made up of puffed rice and other ingredients mixed properly to make tastier combination. Metro station is good place as being office hours they get some good customers. And so does with this man. I was waiting for my friend when I took notice of this man selling handsomely on the street. There were many others too selling similar item. The all lined up one after the another.
What more impressive are the way they put up all the ingredients on their stall. It is more colourful and attractive. Just one after the another, with not even a piece mixing with other. Many a times people find themselves hungry mere looking at these stalls. Just like me, but had a heavy breakfast so avoided, but I made sure to capture the vendor and their stalls as closer as possible.
The above image was taken from the front of the stall. So you can what the customer would be looking at. The lining up the items are tempting. Then I goes towards the seller and taken the below picture.
The vendor keeping the item closer to have them readily mix, when it was ordered by the customer. To avoid delay in making these mixture, the vendor already have the onions, chillies, tomatoes chopped and kept separately.
The raw pieces on the stall are just to add a bit of swag and making the stalls colourful. They have the fried peas, the peanuts, and fried lentils. All these items were mixed with the puffed rice. That is rhe main item, that makes up to the mixture, or snack item.
These puffed rice were always kept in bigger quantity, Inside a plastic to avoid it being spoiled in air. Whenever any customer approaches them, they are ready to make mix instantly. People do like to munch and this is a perfect things for them on the street.
Putting all the little quantity of each ingredients, in seperste bowl, add the chopped onion / tomatoe the vendor mix them with a spoon adds little bits of salt and serve them in a paper packets. They are quick and munchy stalls that are very common during the evening hours.
However the life of these vendors are alwsys on toes. These were alwsys un radar of traffic police or local security to avoid any chaos on the street. This is where there easy to maintain stall comes into play. They simply pick them up on head and hand ran away. Here is an instance, of them running on police siren.

Apart the luck to have a regular customer they also carry the extra risk of being chased upon by he law keeper. Still they carry them and doing their earning in the best of the way. The munchy snack though taste better with all the ingredients together. They keep the city lifeline up and going.

I love making them...those were far better and safe....infact, having a Bengali touch, jhal-muri is my favourite, which easily been made at home.
India is so full of colors! I am often seeing the real indian food just from youtube and it's often from those kind of videos where it shows how unhygienic the food are because it's super popular here. It's refreshing to read different perspective from it 😊
There are always two sides of a coin...it is ridiculous on those who always look atone side only just to get some views and popularity....India is big and there are many perspective ....

So much colour and so many things... they really eat so many things that they sell in the streets... it's weird to see all that, but very colourful... it must taste really good!😃
They mix little quantity of everything ...a quick munchy item in offering is good for the crave for food....
I usually take my food with me if I eat out hahaha but you can try it.
I did it many a times...it is good, nothing to harm....I have similar things in railway station too..

Food selling is really a lucrative venture. I was discussing with a friend this afternoon and we said that the inflation in our country is causing food vendor to exploit the privilege to make mindless income - because people must eat to survive
