I'm here with the most practical yet delicious recipe to make in our country. Because its shape resembles a cigarette, it is called "cigarette pastry". If you have access to phyllo dough, this recipe will be really easy for you. It's the only pastry I've ever eaten since I was a kid without getting bored. I was so lazy to prepare something today. I thought of the phyllo dough I bought from the market the other day. I made myself a cigarette pastry with it. It's time to share this practical recipe with you.
You can put anything you want in the interior mortar. I love to prepare special cheese and potatoes. In our country, there is cheese called "cheddar". I couldn't find the English version of it, but it looks very similar to kashkaval cheese. A cheese that melts and stretches when it comes into contact with heat. You can also prepare it with Parmesan cheese if you wish. I really like parsley on cheeses. If there is cheese, I definitely add parsley.
First of all, I started with preparing the cheese mortar. Since the cheese is unsalted, I added some salt and chopped the parsley into tiny pieces. I mixed the mixture well and added it to the widest part of the phyllo dough cut into triangles as you can see in the image and wrapped it like a roll. Here, the phyllo dough is sold in the form of triangles. If it's round you, cut it into a triangle. Here is the learning.
In order not to open the phyllo dough while it is cooking, I wet the tip with water and ensure that it is fixed well. Be sure to do this. Also, do not apply too much pressure when rolling the phyllo dough.
For the potato mortar, I boiled the potatoes first. Then I mashed them and added black pepper, cayenne pepper, salt and some parsley. Black pepper goes well with potatoes, make sure to add it.
Pies are ready to bake. Let's add our pan to the stove. The more oil you use when frying potatoes, the more oil you add. There should be a little more oil. Let the oil heat up well. After warming up, let's leave the rolls we prepared in the oil. Turn on the stove to medium heat. If you open it too much, the outside will be cooked immediately, but the inside will remain raw.
Let's make sure the rolls are browned on all sides. Let's continue cooking until it turns golden.
After the rolls are cooked, let's lay a napkin before putting them on the plate. Since we are cooking in oil, the napkin will absorb the oil. We will get rid of the oil in a little while.
I cooked all the dough until the last roll. Now our Cigarette Pastry is ready!
