I'm doing my best to follow a rather loose Keto-Style diet, but man sometimes you just want those carbs, not to mention, dairy too. I just had to have some pasta for dinner.
I still had a half bag of shrimp in the freezer from Christmas, so that was definitely on the menu.
It is so easy to make and I usually have everything on hand, if you know me at all, you know I love having my pantry well stocked.
With everything chopped, the water boiling for the pasta, it was time to start the sauce.
In one frypan, the garlic, onions and sun-dried tomatoes were cooked until softened and then I add in the shrimp.
I have a homemade powdered mix to make Alfredo sauce, I just add the cream cheese and cream mixing it well and bring it to a simmer.
The sauce is added to the garlic, onion, tomato, and shrimp and simmered on low until it thickens. It's looking good, right? Meanwhile the pasta should be almost ready to drain.
I always toss the pasta with the sauce to coat the fettuccini and add more to the pasta once it is plated.
What would pasta night be without garlic bread? There must always be garlic bread when your married to an Italian. ;-)
I know I went of the Keto plan by a long yard, but oh my, it was so worth it.

Oh yummy. I've been over loading on carbs too. It seems to be a winter thing. I don't like to step on scales though.
I think you have a good point; I just want carbs lately and I do step on the scale, and it lets me know I've had too many. lol
