Homemade Apple & Pumpkin Pie for Thanksgiving - by Sunscape

My son Randy Hilarski, his wife Anabell, and my grandson Maximus are at the train station as I'm making this post. I just finished making the Apple and Pumpkin pies, as per my son's request. It has been a busy two days preparing for our Thanksgiving meal. They are so excited to be here for a holiday and my grandson called me from the train to say there was only one more stop to make. This is my daughter-in-law's and grandson's first time coming to the States. They have been in NYC for two days before traveling to Rochester to be with us.

Here is how I made this luscious-looking pie. Enjoy!

Pie Crust Recipe

1 cup Crisco
1/2 cup butter
3 cups all-purpose flour
1 tsp salt
1 egg
1 tbsp vinegar
Water

Chill both fats in the freezer until very cold. Mix flour and salt together then cut in fat.

Crack the egg into a 2-cup measuring cup. Add vinegar and combine with a fork. Add water to the 1-cup line and mix.

Add the liquid to the dry ingredients until the right consistency is reached. Fold the dough over itself 2 or 3 times and divide it in half. Roll out the dough on a floured surface large enough to fill your pie tin.

The pie crust on the lower right is for the Pumpkin Pie, and the left is for the Apple Pie.

After cutting up some Granny Smith & two Honey Crisp apples, I added a 1/4 cup of flour and 1/2 cup of sugar. 1 teaspoon of cinnamon, 1/2 teaspoon of Allspice, and a touch of nutmeg. I tossed it all together and I laid the apples evenly throughout the pie crust.

After topping the pie with another crust with a few slits in the top, I brushed the entire pie with an egg wash. I then put aluminum foil around the edges so the crust does not burn while baking. Also, you can sprinkle some sugar on top of the egg wash if you desire. I did!

I preheated the oven to 400°F and baked the pie for 20 minutes. Then I lowered the temperature to 375°F, removed the foil, and baked it for 30 - 40 more minutes.

Can you tell how flaky that pie crust is? I have used this recipe for years and it was given to me by my Aunt years ago. I can't wait until my son sees how scrumptious this pie looks. His eyes are going to bug out. :-)

His next favorite, the pumpkin pie is just awaiting the whipped cream to be made on Thanksgiving day. I just use the recipe on the Pumpkin Pie filling can and it always turns out perfect. Happy Thanksgiving to all of those residing in the US.
