It has been a very busy week with Thanksgiving right around the corner. I'm doing my best to use up things in the refrigerator to make room for all the different recipes to be made. Also, my freezer is overflowing with meat and veggies from the garden.
This is one of the meals I prepared recently and I may repeat while my son is visiting for the holidays. I am deciding what type of meals to serve him and his family that they would not get to have living in Panama.
Chicken Breast with Ham & Salsa Verde Sauce
4 chicken breasts - sliced thinly or pounded thin
4 slices of deli ham
4 slices of Provolone cheese
1 package of cream cheese
1/4 cup fetta cheese (optional)
1 small onion - minced
salt & pepper to taste
1 pint of salsa verde - I used my homemade sauce
- 1 - Mix the cream cheese, fetta cheese, minced onion, and a little salsa verde. This will be the stuffing for the chicken roll.
- 2 - Pound the breast to flatten thinly, put a slice of cheese on top, then layer with the ham. Spoon a portion of the cheese mixture onto the center. Roll the chicken and secure it with a toothpick.
- 3 - Place the breasts into a lightly oiled baking dish. Top the breast rolls with the salsa verde and cook the chicken at 350°F. for 40 minutes.
Serve with your desired side dish. I baked some roasted potatoes with a little cheese and they paired perfectly together. This was a mix of everything that I had on hand and to my surprise it was amazing. I will definitely be making this again soon. Have a wonderful weekend my friends.
