It has been a very cold week here in western, N.Y. and plenty of snow has fallen. I found half a jar of Kalamata Olives in the back of the refrigerator, and I had a few small potatoes that had to be used. I hadn't made cheesy-smashed potatoes since early last year and thought that would be nice with the Kalamata Chicken I decided to make.
Kalamata Chicken
2 chicken breasts
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 tablespoons olive oil
2cloves garlic minced
1/2 teaspoon sea salt
1/4 teaspoon of cracked pepper
1 teaspoon of chopped fresh rosemary
1/2 cup pitted Kalamata olives
1/4 cup white wine
- Combine the vinegar, Dijon, olive oil, garlic, salt, pepper, and rosemary; mix it well. * * * Pour all of the mixture over your chicken breasts and add the Kalamata olives. All this to marinate for 1-2 hours before baking.
- Preheat the oven to 375°F. and bake the chicken for 35-40 minutes or until you feel it is done to your liking.
Cheesy Smashed Potatoes
1 - Clean and boil the potatoes with the skins on until soft while the chicken marinates.
2 - Let them cool slightly before smashing them with a spatula.
3 - Season them with salt, pepper, and Italian herbs.
4 - In a hot skillet add some olive oil and brown the potatoes until they start to crisp.
5 - Turn the potatoes carefully and brown the other side.
6 - Sprinkle the tops of the potatoes with shredded cheese. Place a cover on the pan to melt the cheese and turn down the heat. You want to keep them warm while the rest of your meal is cooking.
They look pretty good and smell wonderful too. I had a few that fell apart when I turned them over, oops.
Back in September, I shared a post on how I preserved the last Zucchini from the garden. I pulled " Zucchini Patties" from the freezer to thaw earlier in the afternoon. I put them on a tray and heated them for 20 minutes while the chicken finished cooking.
They actually froze very well and were nice and crisp, as if I had just made them from scratch.
I love being able to take previously prepared foods from the freezer for dinner.
For tonight's dinner, I'm going to see what else I have on hand in the freezer that I already prepared. I just bought a new book and plan on reading a lot of it today while watching the snow falling outside. Hot cocoa sounds good too.

I never tried putting cheese into a potato maybe my daughters would be happy if I prepare it for them. I should try this one, thank you for sharing I can swift my cooking style into a new one.

Wow! You could just make delicious food from things in your fridge as if by magic. But that book is quite out of place in your kitchen! I wouldn’t follow all the recommendations!🙀😂
I agree, kaminchan that book has too much medical jargon for my liking but it does get into how different types of diets are not good for us. ;-)
Back in 1994, I had this figured out, that food was hugely important for mental health and I've been on a decades long search for the right diet. I did best when we raised all our own food. I ate NO sweeteners of any kind in the beginning. In 2006 I cut out wheat of any type. I lost weight. Currently I am on keto and intermittent fasting. But I'm finding it hard to do. So I am curious and have ordered the book from the library. I am always fascinated by the science and am fully aware of how very little is taught about nutrition in medical schools.
I have been the same way and know very well how food and all those nasty ingredients they put into things are not good for the body or brain. I do intermittent fasting and just went back on a mostly keto diet again. I dropped 20 lbs the last go around a year and then stopped, and now back on it again. The book gets technical in the first part. I am only 1/3 the way into it.
I did the same when I started last April, lost 20 and stopped. Sigh...
