TURKISH WARM SALAD

A nice veggie recipe of salad in my collection.
This time the main ingredient here is chickpeas!

Here it's called Turkish peas, so I wasn't surprised when I saw it in this salad.
Nevertheless, the whole recipe isn't very typical for our local traditional salads, so I was interested how it would taste.

The result impressed me and my family as well! Even those who don't like my vegan dishes were in love with it! So it's really worth of attention.

We need:

  • chickpeas
  • eggplants
  • sweet pepper
  • onion
  • plant oil
  • apple vinegar
  • spices

At first we need to soak eggplants in salty water for about 30 min.
It will remove their bitterness.

Then I baked them for 15 min.
Then eggplants should be mixed with apple vinegar and left for 30 min.

Chickpeas should be soaked for 12 hours (for a night) as well.
Then we cook it for 60 min.

Now we need just to cut them all, to mix and add spices and oil.

We cut pepper, onion, eggplants and mix them with chickpeas.

Ready!

it's super tasty salad!
And it's very nutritious!
You will be fed up for many hours, and your body will say "Thanks" for healthy food.

It looks really different and fresh. Although eggplant looks strange in other ingredients but I hope it tastes so good! :)

why do they look strange?:)

Because we don't eat eggplant as a fresh vegetable in salad, so seeing fresh eggplant among other ingredients seems like it will alter the taste. But I hope that like you, I will also be surprised after trying it!😋
