In today's post, I am going to show you guys how to make Nigerian local Egusi (Melon) Soup With Bitter Leaf. So follow me as I lead the way gently.
How To Prepare Egusi Soup
The below is the Nigerian local Egusi (melon) Soup served garri (processed cassava), So yummy.

Let's find out how to prepare it with practical steps.
Ingredients
Stockfish
Meat
Meat and stockfishMelon
My melonRoasted ice fish
My roasted ice fishCrawfish
Knorr Maggi
My crawfish and knorr MaggiBitter Leaf
My squized bitter LeafFresh Pepper
My fresh PepperSalt
My SaltRed Oil
Water
Onion
Pardon me, I couldn't capture all ingredients in my picture, but I will be very detailed in my explanation and we will see them all there.
Procedure:
- Thoroughly wash meat and stockfish:
First get the meat and stockfish washed as seen from my below picture.

- Season the washed meat with salt, Maggi and onion, then add little water and cook for 5 munits.
My seasoned meat ready to be cooked
Grind your Pepper and crawfish and add to the cooked meat and stockfish. Also add the knorr Maggi and allow to cook for 3 munits.
Add red Oil of your desired quantity to the pot.
Add little water and slice a little onion and add to your melon, turn it thoroughly till all get mixed up, then add the melon mixture to the pot and allow to cook for 5 munits.
Taste the food for salt and add more salt if need be.
Finally, add the Bitter Leaf and allow to cook for 3 munits.
In most cases I love frying my melon, but in this case I cooked it along side the food without frying and the taste was still good.
The Egusi (melon) Soup doesn't need much water, so I prefer cooking it with the water from my per-boiled meat.
- And finally, our food is ready.
