For the tomato sauce concentrate, put it in small quantities in the ice cube tray and freeze it, then put it in a plastic bag and the refrigerator; you can keep it for up to five months.

That's what we used to do with peeled tomatoes and tomato paste from the can, when we can't use it all in one go. Only we didn't use ice cubes but recycled those sauce containers we got from food deliveries.
