Making Caramel Toffee! (Also Salted Caramel Toffee!)

Something Far Too Sweet!

Caramels as they call it! I mean now who doesn't like caramel? I've legitly never met anyone that doesn't! However some may claim that they don't after I said this but if so they have been missing out big time!

This was literally a made in the moment decision! It might turn out to be a flop or it might turn out to be beyond delicious and sweet! Let's find out which of it, it will be after such an eradic decision!

What You Need!

The recipe of ingredients are pretty simple, you don't even need that much. I'd say you need more patience than anything else to be honest!

Okay so...

  • 1 Cup of Butter.
  • 4 Cups of Granulated Sugar.
  • 2 Cups of Light Corn Syrup.
  • 24 Ounces Evaporated Milk. (2 Cans)
  • 1 Teaspoon of Vanilla Extract.

I mean that is as basic as it can get!

Four main ingredients and then a teaspoon of vanilla extract! I tell you, the best stuff can't exactly always be bought it has to be home made! Now whether these are going to set into caramels we don't yet know! But we are going to try and if it does fail it'll still be something sweet to eat on!

The Process!

The process is a bit of a tedious one! Seriously so if you really want to try this out you've got to stack your sack full of patience! Yeahp because it'll tire you out quicker than you think!

First off get ready for a lot of constant mixing and that over a hot oven plate! It'll be worth it though!

So what we did here was easy! We dunked everything in at one go! Almost everything!

You take all the butter and all of the sugar along with the corn syrup and dunk it into a pot! Then you obviously try and mix it up nicely while the butter melts.

My plan involved smashing the butter to get it melted faster, it worked quite well! Yeah I am not the biggest patience fan so maybe we shouldn't have tried it xD But we are deep in now ey!

Now once the setting of the melted sugar, butter and syrup is identical to this you can start adding the evaporated milk, we call it "Ideal Milk"

Remember this is just the heat doing it's thing with the sugar and butter, nothing fancy here just keep stirring!

The Fancy Part!

Well this might be the fancy part here!

Or the tedious one testing your patience!
For sure!

Anyways, I'll be honest and say we rushed this part maybe too fast! What you should do is once your entire mixture is at a nice boiling point you can start adding the evaporated milk (Ideal Milk) slowly into the mixture.

  • You should take around 12-15 minutes on each can which is pretty long! Your mixture should not stop boiling.

By looking at mine ours did quite a few times, even though we trickled it in, but there was still some parts that boiled so whether it was affected I'm not yet sure! So make sure to find that perfect spot!

A Nice Colour.

Okay we must be on some path to victory here!

The colour turned out correct, it does look like caramel now and the mixture did grow stiffer as the process went on!
By the way we had a few taste tests and I've got to say it was delicious!

Now for the toffeeness test!

What we did as recommended was to take a cup full of ice and drop some of the caramel mixture over an iceblock and then see if you can start rolling it into a ball!
Tricky stuff!

Nothing Fancy!

For now we just threw the mixture into pans to set, the cutting up part will come a bit later, closer to Christmas, if we are going to cut it up and wrap it even, not at all sure what the Betty has planned!

I know what I planned! We topped one of the three pans off with some grinded up salt! Oh yeah salted caramel here we come!

This is going to be delicious!

Remember to let it cool nicely before digging in to eat! The other thing too remember is that sugar products can burn like hell when heated on top of hot plates! BE CAREFULL!
