I wanted to post this yesterday. I thought, I'd do a quick post on cooking ribs in my NuWave Infrared Cooker. I attempted this for the first time Sunday, and man did they come out good.
I almost always serve ribs with collard greens and baked mac and cheese. So as soon as I woke, I prepped the mac and cheese (a recipe for another post). I swear to the gods there's macaroni under all that cheese 🤣
Next I rubbed the meat and let it rest for an hour or so. I make my dry rub a little different each time, depending on the spices I have in the cupboard. This time I used:
2 tbs of brown sugar
2 tbs chili powder
1 tsp of paprika (preferably smoked paprika)
1/2 tsp of cayenne
1/2 tsp of black pepper
1/4 tsp of cinnamon
salt to taste.
My rub comes out different every time. Season to taste. I like things a little spicy.
Once the meat is rubbed and rested I double wrap in tinfoil. The meat is wrapped with a couple tablespoons of apple cider vinegar and about a 1/4 cup of water. I double wrap the meat, it's important the water/cider mixture doesn't leak out.
I cooked for 2 hours and 30 minutes at 195℉. I flip the ribs at about the 1 hour and 15 minute point (halfway) then unwrap and cook for another 20 minutes at about 320℉ on each side adding the BBQ sauce at the end.
The End Result
The end result was incredibly tender and juicy ribs with a side of baked mac and cheese and Glory brand canned collard greens. If it's not Glory or homemade, it's shit. I then served with an ice cold Rum and Coke.
I shared this meal with my father while we watched the Buffalo Bills lose another game :( After this meal though, even when we lose, we win 🤣
The Dood may not be a huge football fan, but I'm never one to turn down an opportunity for drinks and good food. Cheers friends!
