Every child loves cookies
My lady requested oat cookies recently. She ate oats a few times with milk, I was surprised she liked it because to be completely honest, I didn't like it at all. I was hoping for her to finish the package, lol. I was surprised she requested me to make oat cookies, but soon I found out she saw it in a cartoon, and therefore she was interested. Oh well, there are worse requests, aren't there?
Looking for inspiration
I saw different oat cookie recipes online and none really looked appealing to me as a non-oat lover. Until I bumped on a recipe that included bananas. I love bananas and after the successful banana bread last week, I decided to go for a recipe including bananas. Soon I discovered that there are plenty recipes out there that use coconut oil instead of the traditional flour, butter and eggs as ingredients. At that point, I was interested because I don't want to use that much butter in general and it was about time that I'd refill our coconut oil stash as well. I combined a few recipes, and decide to go for a banana oat cookie with chocolate chips in it as I still had these in the kitchen cabinet and thought it would be a good idea to use them after such a long time.
These oat cookies are done in a heartbeat
Not only do you need a few ingredients only, mixing them up only takes a minute or 2 max and they were done within the 30 minutes total from prepping to getting them out of the oven.
The ingredients:
- 1 ripe banana
- 100 grams of (rolled) oats
- 2 tablespoons of honey
- 1 tablespoon of soft/melted coconut oil
- 50 grams of chocolate chips
- pinch of salt
That's it!
The process
This is probably the easiest process for homemade cookies I've discovered so far. Although I'm not a real fan of kneading stuff with my hands if it contains honey, I really loved how fast these cookies were prepped and placed in the oven.
- Preheat the oven at 170 degrees
- Mash the banana in a bowl
- Add the oats, honey and coconut oil with the pinch of salt
- Stir them until fully mixed
- Leave the mix on the counter for 10 minutes so the oaks can soak up the liquids
- Add the chocolate chips to the mix, keeping a few on the side to sprinkle on top of them after they come out of the oven.
- Now take out 1 tablespoon of the mix at a time, roll this up into a ball and then flatten it until it's a disk. Repeat until the mix is all processed.
- Place them in the preheated over for about 15 minutes and sprinkle a few extra chocolate chips on top of them while they're still hot.
- Let them cool off before tasting them.. (It's worth the wait)
The end result
Not too bad for a first time, right? I think I can improve my rolling skills and make them look similar rather than having all sorts of sizes like I have now. I like the banana/chocolate combo with the oats, and I will most-likely try out a few more oat cookie recipes soon because it's easy, without the flour messy mixing part and healthier than those butter filled cookies (which I love love love, don't get me wrong). My boyfriend is often hunting for something to fulfill his cravings in the kitchen cabinet and I think I can make him fall in love with oat cookies.

This is something I make often. Sometimes I substitute boiled apple mash or pear mash in the place of bananas.
I have never made this using coconut oil though.
Oh you should try, that works fine :) I have to admit, I never considered that either until I read it in another recipe..
I am not so okay with the smell of coconut oil. I'll give it a try though.
Oh ok, well it's your choice obv :) I don't like the smell of olive oil myself, but I do eat it sometimes (I prefer coco oil though lol)

They look delicious, and this recipe could easily be made vegan with dairy-free chocolate and/or without honey for those that may not consume it. When I was a child, my mother often made oatmeal raisin cookies, another good partner for oat-based cookies.

didn't even think of that (dairy free chocolate) we try not to eat too much chocolate here as many of these things make our daughter respond badly. So I cut it out for a big part. These drops were found between my baking supplies, still unused so I took the opportunity to add them for once :)

It's chill, nothing special, but we got some things done and it's mostly about work and the emigration (listing items) as well as some egg painting by my daughter.
With all the emigration things on my mind, I forgot to buy chocolate eggs etc :) oops

My daughter is a huge oat cookie fan now and she told me 10 x at least, I'm the best oat cookie baker. Of course, she doesn't have a comparison (lol) but I guess I will need to make them more often for her :)
